BLT Salad

Cook bacon in large skillet over medium heat until crisp; transfer to paper towels
- 6 slices turkey bacon
- 1 10oz bag Boston (Butter Lettuce)
- 1/2 pint grape tomatoes, halved
- 4 Green Onions, chopped
- 1 garlic clove, pressed
- 3 tablespoons mayonnaise
- 1 tablespoons white-wine vinegar
- 1 TB fat-free milk or buttermilk

- Sauce:
- 2-3 chicken breasts, sliced into strips, salted
- Shitake & Baby Bella Mushrooms, sliced
- Onion - cut into strips
- Celery - julienned
- Carrots - julienned
- Red pepper, cut into strips
- Jalapeno pepper, minced
- peanuts, optional
- Rice Wine vinegar
- Soy Sauce
- Sesame oil
- chicken stock
- Chili garlic paste
- flour/corn starch
- Basil, chopped
- Crushed garlic
- Rice
Buffalo Chicken Potato Skins

Prick the potatoes a few times with a fork and bake in a preheated 400F oven until tender, about an hour
- 4 medium baking potatoes such as russet, scrubbed clean
- oil for brushing
- 2 cups cooked chicken, shredded or diced and warm
- 1/2 cup hot sauce (such as Frank's Red Hot)
- 2 tablespoons butter, melted
- salt and pepper to taste
- 1/2 cup cheddar cheese
- 1/2 cup blue cheese, crumbled
- 2 green onions, sliced
- 1/4 cup blue cheese dressing
Chicken Breasts Stuffed with Artichokes, Lemon, and Goat Cheese

You can stuff the chicken breasts and chill up to 4 hours before cooking
- 2 1/2 tablespoons Italian-seasoned breadcrumbs
- 2 teaspoons grated lemon rind
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 (6-ounce) jar marinated artichoke hearts, drained and chopped
- 1 (3-ounce) package herbed goat cheese, softened
- 4 (6-ounce) skinless, boneless chicken breast halves

Shrimp & Grits

First, peel and devein the shrimp
- Shrimp:
- 1 1/2 pounds (26-30 count) Wild Georgia Shrimp
- 2 tablespoons Cajun seasoning (recommended: Tone's Louisiana Cajun seasoning)
- 1 tablespoon paprika
- 1 tablespoon dried Italian seasoning
- Freshly ground black pepper
- Grits:
- 2 cups water
- 2 chicken bouillon cubes (recommended: Knorr)
- 2 tablespoons butter or margarine
- 1 cup quick grits (recommended: Quaker)
- 1 tablespoon tomato paste
- 3/4 cup heavy whipping cream
- 3 1/2 ounces extra-sharp Cheddar
- Sauce:
- 2 tablespoons butter or margarine
- 1 tablespoon minced garlic
- 3 tablespoons all-purpose flour
- 1 cup chicken stock
- 1/2 cup heavy whipping cream
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce (recommended: Texas Pete)
- 1 slice sugar-cured country ham
Chile-Cheese Mayo

- 1/4 cup Mayo
- Cheddar Cheese, grated
- 4 oz can Green Chiles, chopped

Beef & Green Onion Stir Fry

Easy but delicious weeknight dinner
- 1 1/2 bunches green onions
- 1 pound top round steak
- 3 tablespoons cornstarch, divided
- 3 tablespoons lite soy sauce
- 1 medium-size red bell pepper, thinly sliced
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil (optional)
- 1 cup beef broth
- 2 tablespoons rice wine vinegar
- 1/4 to 1/2 1/4 to 1/2 tsp. crushed red pepper flakes
- 1 Boil-in-a Bags of Rice (I like Brown Rice)
Aunt Lela’s Pineapple Pudding

- 1/3 sugar
- Lemon juice
- 8 slices of bread - cubed

Fiery Hot Green Srirach Sauce

Crab Wonton Cups

You can vary the ingredients, from crab to shrimp, mushroom or use your imagination
- Filling:
- 2 green onions
- 3 ou. cream cheese, cut in chunks
- 1/3 cup mayonnaise
- 4 ou. grated cheddar cheese (or smoked gouda works well)
- 2/3 cup crabmeat, (Can vary the recipe with bay shrimp or chopped mushroom for the filling
- 2 tsp. Old Bay seasoning
- 1 tsp. fresh lemon juice
- 1/2 tsp. Essence of Emeril seasoning or something similar
- Wonton wrappers (found in vegetable refrigerated section)
