Pork with Apples, Bacon, and Sauerkraut (Southern Living -Feb 2013)

Haven't tried this yet - but reviews said to watch cook time (might only take 2 1/2 hours)
- 1 (3-lb.) boneless pork loin
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- 6 ounces thinly sliced pancetta or bacon
- Kitchen string
- 2 tablespoons olive oil
- 2 small onions, quartered (root end intact)
- 1 (12-oz.) package frozen pearl onions (about 2 cups)
- 2 garlic cloves, thinly sliced
- 3 fresh thyme sprigs
- 2 bay leaves
- 1 (12-oz.) bottle stout or porter beer
- 2 tablespoons Dijon mustard
- 3 firm apples (such as Gala), divided
- 2 cups jarred sauerkraut, rinsed
- 2 cups finely shredded green cabbage
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 teaspoon fresh lemon juice
- 1/2 cup apricot preserves
- 1/4 cup chicken broth
Grilled Chicken Tacos (Southern Living)

1. Preheat grill to 300° to 350° (medium) heat
- Easy Side Dish - Black Beans:
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 4 teaspoons Montreal chicken seasoning
- 1 1/2 pounds chicken breast tenders
- 1 (8-oz.) container refrigerated fresh salsa
- 1 large mango, peeled and chopped
- 1/4 cup chopped fresh cilantro
- 2 teaspoons chipotle hot sauce
- 6 (6-inch) fajita-size flour tortillas, warmed
- Toppings: crumbled queso fresco (fresh Mexican cheese), and shredded romaine lettuce
- Combine 1 (20.5-oz.) can refried black beans, 2-oz. of whipped chive-flavored cream cheese, and 1/2 tsp. ground cumin in a 2-qt. baking dish.
- Top with 2 Tbsp. finely chopped red onion and 1 cup crumbled queso fresco (fresh Mexican cheese).
- Bake at 450° for 20 to 30 minutes or until cheese melts.
Zuppa Toscana (Olive Garden CopyKat)

Cook sausage in a 300-degree oven
- 1 lb. Italian Sausage
- 2 large Russet Baking Potatoes sliced in half, and then in 1/4 inch slices
- 1 large Onion, chopped
- 1/2 can. Oscar Meyer Real Bacon Bits (these are less fatty than real bacon)
- 2 cloves garlic minced
- 2 C. Kale or Swiss chard chopped
- 2 cans Chicken Broth
- 1 qt. Water
- 1 C. Heavy Whipping Cream

- 1 stick butter in a saucepan over medium-high heat.
- 1/4 cup flour
- 1 cup milk
- pinch of nutmeg
- 8 ounces cubed Velveeta cheese
- 1/4 cup lager beer or chicken broth
- 1 teaspoon hot sauce
- 1/2 teaspoon kosher salt

Microwave bacon according to package directions until crisp; drain on paper towels
- 1 (2.1-oz.) package fully cooked bacon slices (Oscar Mayer)
- 1 (16-oz.) container sour cream
- 2 cups (8 oz.) freshly shredded sharp Cheddar cheese 1/3 cup sliced fresh chives or green onions
- 2 teaspoons hot sauce
- Garnishes: cooked, crumbled bacon; sliced fresh chives; freshly cracked pepper
- Serve with: waffle fries
