  • 1 (3-lb.) boneless pork loin
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 6 ounces thinly sliced pancetta or bacon
  • Kitchen string
  • 2 tablespoons olive oil
  • 2 small onions, quartered (root end intact)
  • 1 (12-oz.) package frozen pearl onions (about 2 cups)
  • 2 garlic cloves, thinly sliced
  • 3 fresh thyme sprigs
  • 2 bay leaves
  • 1 (12-oz.) bottle stout or porter beer
  • 2 tablespoons Dijon mustard
  • 3 firm apples (such as Gala), divided
  • 2 cups jarred sauerkraut, rinsed
  • 2 cups finely shredded green cabbage
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 teaspoon fresh lemon juice
  • 1/2 cup apricot preserves
  • 1/4 cup chicken broth

1. Preheat grill to 300° to 350° (medium) heat

  • Easy Side Dish - Black Beans:
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 4 teaspoons Montreal chicken seasoning
  • 1 1/2 pounds chicken breast tenders
  • 1 (8-oz.) container refrigerated fresh salsa
  • 1 large mango, peeled and chopped
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons chipotle hot sauce
  • 6 (6-inch) fajita-size flour tortillas, warmed
  • Toppings: crumbled queso fresco (fresh Mexican cheese), and shredded romaine lettuce
  • Combine 1 (20.5-oz.) can refried black beans, 2-oz. of whipped chive-flavored cream cheese, and 1/2 tsp. ground cumin in a 2-qt. baking dish.
  • Top with 2 Tbsp. finely chopped red onion and 1 cup crumbled queso fresco (fresh Mexican cheese).
  • Bake at 450° for 20 to 30 minutes or until cheese melts.
