Easy Peach Cobbler

Drain 1 can peaches, discarding juice
- 3 (16 oz.) cans sliced peaches
- 1/2 c. butter
- 1 c. baking mix
- 1 c. sugar
- 1 c. milk
- Topping: ice cream or whipped topping
Maurine's Cheesecake Ice Cream

Combine egg yolks and 3/4 c
- 5 egg yolks
- 2 1/4 c. sugar
- 1 1/2 pints half and half
- 3 (8 oz.) cream cheese
- 3 Tb. lemon juice
- 3 tsp. vanilla
- 1 1/2 pints plain yogurt
Roasted Sweet Potatoes and Orange Salad

1. Preheat oven to 400 degrees
- Salad:
- Roast the sweet potatoes, section the oranges, and slice the onion ahead of time. Keep them refrigerated separately until you're ready to toss the salad.
- 1 Tb. chopped fresh rosemary
- 2 tsp. olive oil
- 1 1/2 lbs. peeled sweet potato, cut into 3/4" pieces
- 3 garlic cloves, unpeeled and crushed
- 3 c. orange sections, (about 6 oranges)
- 1/2 c. vertically sliced red onion
- 3 Tb. pine nuts, toasted
- 1 (6 oz.) bag prewashed baby spinach
- Dressing:
- 3 Tb. fresh orange juice
- 2 Tb. olive oil
- 1 Tb. stone-ground mustard
- 1 Tb. rice vinegar
- 1 Tb. honey
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 garlic clove, minced
Easy Pumpernickel Bread

In a small bowl, sprinkle yeast from roll mix over coffee; allow yeast to soften
- 1 pkg. (16 oz.) hot roll mix
- 3/4 c. warm (105-115 degrees) strongly brewed coffee
- 2 eggs
- 1/4 c. molasses
- 3/4 c. rye flour
- 3 tsp. caraway seed, divided
- 2 tsp. cocoa
- 1 egg white, lightly beaten
Beer Batter Onion Rings

Combine flour and 1 tsp. salt; stir in beer and beat until smooth

Oven-Baked French Toast

Arrange bread slices in a single layer with sides touching in a greased 10 1/2 x 15 1/2" jellyroll pan
- Orange Syrup:
- 8 (1/2" thick) slices French bread, (about half of a 1-lb. loat)
- 1/2 c. raisins
- 1/2 c. chopped pecans
- 2 c. half and half
- 6 eggs
- 1/2 c. orange flavored liqueur
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- sifted powdered sugar
- 1 (12 oz.) bottle pancake syrup
- 1 tsp. orange extract
Breakfast Burrito (skinny)

- 1 medium low-fat flour tortilla, 110 calories
- 2 slices extra-lean turkey bacon
- 1/2 c. fat-free liquid egg substitute
- 1 slice fat-free American cheese
Shrimp Teriyaki

- 3 Tb. soy sauce
- 1 Tb. water
- 1 Tb. + 1 tsp. sesame oil
- 2 tsp. sherry extract
- 1/8 tsp. garlic powder

- 2 tsp. honey
- 1 1/4 lb. peeled, deveined shrimp
