Garlicky Chicken and Redskin Potatoes

- 8 chicken breasts
- 3 lbs. redskin potatoes, halved
- 20 cloves garlic, peeled
- 1 Tb. fresh thyme, chopped
- salt and pepper to taste
- 1/4 c. olive oil
- Opt. fresh thyme sprigs

Carne Asada with Black Bean and Avocado Salsa

1. In a medium, non-reactive bowl combine the salsa ingredients

- 1 (15 oz.) can black beans, rinsed
- 1 ripe Haas avocado, finely chopped

- 2 Tb. roughly chopped fresh cilantro

- 1/4 tsp. chipotle chile powder
- 1/4 tsp. ground cumin
- 1/8 tsp. freshly ground black pepper
- Rub:
- 1 tsp. chipotle chile powder
- 1 tsp. kosher salt
- 1/2 tsp. ground cumin
- 1/4 tsp. freshly ground black pepper
- 1 1/2 lbs. skirt steak, trimmed of excess fat
- extra-virgin olive oil

Heavenly Hot Chocolate in a Hurry

- Hot Chocolate Mix:
- 1 c. milk
- 2 heaping Tb. Hot Chocolate Mix
- marshmallows or whipped cream, for garnishing

- 3 oz. unsweetened chocolate
- 1/2 c. water
- pinch salt
- 1 c. sugar
- 1 c. heavy cream
