Dinner Rolls

Combine 1/2 c.butter and 1 c
- 1/2 c. butter
- 1 c. water
- 1 pkg. active dry yeast
- 1/2 c. warm water, (105-115 degrees)
- 1/2 c. sugar
- 3/4 tsp. salt
- 2 large eggs, lightly beaten
- 1 c. whole wheat flour
- 4 c. all-purpose flour
- 2 Tb. butter, melted
Nanny's Best Popovers

Preheat on oven to 400 degrees
- 6 tsp. beef drippings, (if unavailable, sub unsalted butter and heat in the oven 3 min.; add 1/4 tsp. salt to the batter)
- 2 eggs, at room temperature
- 3/4 c. milk, at room temperature
- 1/4 c. water
- 1 c. - 2 Tb. all-purpose flour
Fiesta Guacamole

Blend together avocados and tomatoes
- 4 avocados, peeled, pitted, cubed and mashed
- 2 tomatoes, diced
- 1/2 onion, diced
- 1 bunch fresh cilantro, chopped
- 1 jalapeno pepper, chopped
- 1 Tb. garlic, minced
- juice of 2 limes
Seared Scallops with New Potatoes and Field Greens

This warm salad makes for a quick, light supper
- 1 c. silken or soft tofu
- 1 tsp. lemon zest
- 1 Tb. fresh lemon juice
- 1 1/2 tsp. Dijon mustard
- 1/2 tsp. anchovy paste
- 1 clove garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 2 Tb. extra-virgin olive oil
- 1 lb. Yukon gold or red-skinned new potatoes
- 1 1/4 lb. sea scallops
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 Tb. olive oil
- 8 c. mixed field greens such as baby lettuces, sorrel, and tatsoi
- 6 Tb. chopped fresh chives
- 2 tsp. cracked pepper
Carne Asada Tacos

Directions: 1. Place sliced meat into a shallow bowl, and season with salt, black pepper, and crushed red pepper
- You will love these easy and flavorful tacos! Strips of beef are marinated in lime and pepper, then quickly sauteed, and served in soft corn tortillas with tomatillo sauce and your favorite toppings!
- 1 1/2 pounds boneless beef top sirloin, cut into thin bite-size slices
- 1/2 teaspoon salt
- 1 teaspoon freshly ground black pepper
- crushed red pepper to taste
- 1 lime
- 1 (28 ounce) can tomatillos
- 2 fresh jalapeno peppers, seeded
- 4 tablespoons canola oil, divided 1 (10.5 ounce) can beef broth
- 12 (6 inch) corn tortillas
- 1/2 large onion, chopped
- 2 tomatoes, chopped
- 1 avocado, peeled, pitted and sliced
- 1 bunch fresh cilantro, chopped

Asian Marinated Asparagus

Snap off tough ends of asparagus, and remove scales with a knife or vegetable peeler, if desired
- 1 lb. asparagus spears
- 2 Tb. water
- 1/4 c. seasoned rice vinegar
- 2 Tb. soy sauce
- 2 tsp. fresh ginger, chopped
- 1 tsp. dark sesame oil
Chicken with 40 Cloves of Garlic

Rinse chickens, and pat dry with paper towels
- 2 (3 lb.) whole chickens
- 8 fresh thyme sprigs
- 1/4 c. butter, softened
- 1 lemon, halved
- 2 tsp. salt
- 1 tsp. freshly ground pepper
- 40 garlic cloves, unpeeled (about 3 bulbs)
- 1-2 Tb. olive oil
- Garnish: fresh thyme

Combine sugar, syrup and water in a saucepan and bring to 260 degrees
- 2 1/2 c. sugar
- 1/2 c. light corn syrup
- 1/2 c. water
- 2 egg whites
- 1 tsp. vanilla
- 1 1/2 c. pecans
Gorgonzola and Pistachio Salad

In a medium bowl, combine spring mix, Gorgonzola, pistachios, and cranberries
- 1 (5 oz.) pkg. spring mix or mesclun mix
- 4 oz. Gorgonzola cheese, crumbled
- 3/4 c. shelled pistachio nuts
- 1/2 c. dried cranberries
- 4 Tb. balsamic vinegar
- 3 Tb. hazlenut oil
- 3 Tb. olive oil
Open-Faced Mini Reubens
