- 2 medium potatoes
- 3 tbsp butter
- 1 cup white onion, diced
- 2 tbsp flour
- 4 cups chicken stock
- 2 cups water
- 1/4 cup cornstarch
- 1 1/2 cup instant mashed potatoes
- 1 tsp salt
- 3/4 tsp pepper
- 1/2 tsp basil
- 1/8 tsp thyme
- 1 cup half and half
- Garnish:
- 1/2 cup cheddar cheese, shredded, divided
- 1/4 cup cooked bacon, crumbled, divided
- 2 green onions, green part only, chopped, divided

Combine the olive oil and butter in a large pot over medium heat
- 2 tbsp olive oil
- 2 tbsp butter
- 3 rubs celery, chopped
- 1 onion, chopped
- 2 tsp curry powder
- 1 tsp ground turmeric
- 2 tbsp all-purpose flour
- 1 head cauliflower, cored and chopped
- 4 cups water
- 2 scallions, thinly sliced, for garnish
- 1/2 cup Greek yogurt, for garnish (optional)
