Fudge Stripe Cookie Crust Mini Cheesecakes

- 1 package fudge stripes cookies
- 2 packages cream cheese (8 oz each), softened
- 1/2 cup sugar
- 1 tsp vanilla
- 2 eggs
- 1 tbsp honey
