Grilled Pepper-Crusted Strip Steaks and Creamy Garlic Spinach

Combine the rub ingredients; press evenly onto steaks
- Peppery Rub:
- 1 tsp lemon pepper
- 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp ground chipotle pepper
- 4 beef top loin (strip) steaks, 1 1/4" thick
- Creamy Garlic Spinach:
- 1 16 oz package fresh baby spinach
- 1 1/2 oz package spreadable garlic and herb cheese, at room temp
- 1 tbsp cream or milk
Guiness Cake

Preheat oven to 325°. Line the bottom of a 12" round spring-form pan with parchment paper
- Guiness Cake
- 2 1/4 2 1/4 1 sticks + 1 tbsp unsalted butter
- 1 1/4 1 1/4 1/4 cups guiness
- 1 1 1 cup unsweetened cocoa powder, sifted
- 2 2 2 large eggs
- 2 2 2 cups + 2 tbsp superfine sugar
- 2 2 2 tsp vanilla extract
- 3/4 3/4 3/4 cup buttermilk
- 2 1/2 2 1/2 1/2 cups all-purpose flour
- 2 2 2 tsp baking soda
- 1 1 1 tsp baking powder
- Cream Cheese Frosting
- 7 7 7 tbsp unsalted butter, softened
- 2 1/2 2 1/2 1/2 cups sifted confectioners' sugar
- 1 1 1 tsp vanilla extract
- 1 1/4 1 1/4 1/4 cups cream cheese
Garlic Mashed Potatoes

This is a great dish to have since it does so well with many recipes
- 4 medium/large russet potatoes
- 1 tbsp butter
- 1 tbsp minced fresh garlic (3-4 cloves)
- 3/4 cup water
- 1/2 cup cream
- 3/4 tsp salt
- 1/8 tsp black pepper
Rice Pudding

Mix all ingredients and place into a buttered dish
- 2 cups milk
- 1/3 cup raw rice
- 1/3 cup sugar
- 1 tsp vanilla
- pinch of salt
- 2 shakes of nutmeg
- 1 shake of cinnamon
Roasted Garlic Prime Rib with Fennel Sauce

Preheat oven to 350°. Remove tops of fennel bulbs and reserve
- 2 fennel bulbs
- 4 medium carrots, peeled and cut into 1" chunks
- 1 large white onion, cut into 1" chunks
- 1 tbsp olive oil
- 1 prime rib beef roast, 3 1/2 - 4 lbs
- salt
- black pepper
- 2 tbsp whole fennel seeds, toasted
- 1/4 cup prepared roasted garlic puree
- 2 cups beef broth
Chicken & Rice

Mix together the ingredients in a casserole dish - microwave on full power for 8 minutes
- 1 1/3 cup water
- 1 1/3 cup rice
- 1 can cream of chicken soup
- 1/2 pkg dry onion soup
- 4 chiken breast fillets

Russian Qualude

Kahlua Milkshake

In a blender, combine Kahlua, milk and ice cream and blend briefly
- 1 oz Kahlua
- 1/4 cup milk
- 2 scoops French Vanilla ice cream (or chocolate ice cream)
