Gordi’s Judias Verdes con Tomates

- • ½ kilo green beans, cleaned and cut
- • 1 large onion, diced
- • 1 can fried tomatoes
- • Salt
- • Eggs
Mushroom Cream Sauce (w/ Sage)

Melt butter in a saute pan over low heat
- 2 tablespoons unsalted butter
- 2 garlic cloves, finely minced
- 5 sage leaves
- Salt and pepper, to taste
- 6 ounces portobello mushrooms, sliced
- 1 cup heavy cream
- 1/2 leek, roughly chopped
Cuban black beans and rice

In a medium saucepan, heat oil over medium-high heat
- 2 TBS EVOO
- 1/4 white onion, dicced small (1/2 cup)
- 1/4 green bell pepper, diced small (1/2 cup)
- 2 garlic cloves, minced
- coarse salt, and ground pepper
- 1/2 tsp ground cumin
- 1 TBS chopped fresh oregano leaves
- 1 cup long-grain white rice
- 1 can (15.5 black beans) rinced and drained
- 2 cups low-sodium chicken broth
Sesame Green Beans

Bring a large pot of cold water to a boil over high heat and salt it generously
- * Kosher salt
- 1 * 1 pound green beans, trimmed
- 2 * 2 tablespoons soy sauce
- 2 * 2 tablespoons water
- 2 * 2 teaspoons toasted sesame oil
- 1/2 * 1/2 teaspoon cornstarch
- 1/8 to 1/4 * 1/8 to 1/4 teaspoon red pepper flakes
- 2 * 2 teaspoons vegetable oil
- 3 * 3 medium shallots, thinly sliced
- 2 * 2 cloves garlic, chopped
- 2 * 2 teaspoons chopped fresh ginger
- 1 * 1 tablespoon sesame seeds
- 2 * 2 teaspoons rice wine vinegar
Cream Sauce with Onions & Mushrooms

Toss this sauce with 1 pound cooked pasta
- 3/4 cup heavy cream
- 2 Tbsp butter
- 1/2 tsp salt
- 1/3 cup chopped onion
- 8 oz sliced mushrooms

- 1/2 cup flour, plus more if needed plus more for dusting
- 1/4 cup grated Parmesan, plus more for garnish
- 2 egg yolks
- 1/4 teaspoon ground nutmeg
- 2 tablespoons finely chopped thyme leaves
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons unsalted butter
- 2 cup cremini mushrooms, sliced
- 1/2 cup white wine
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley leaves, for garnish
