Luscious Chocolate Truffles

Line cookie sheet with foil or parchment paper
- 1 bag (12 oz) semisweet chocolate chips (2 cups)
- 2 tablespoons butter or margarine
- 1/4 cup whipping cream
- 2 tablespoons liqueur (almond, cherry, coffee, hazelnut, Irish cream, orange, raspberry, etc.), if desired
- 1 tablespoon shortening
- Finely chopped nuts, if desired
- Finely chopped dried apricots, if desired
- White chocolate baking bar, chopped, if desired

- 1 cup mayonnaise
- 1 Tbsp. thinly sliced fresh chives
- 2 Tbsp. chopped cornichons or other small dill pickles
- 1 Tbp. capers, drained
- 1 large hard-cooked egg, peeled and chopped
- 1 1/2 tsp. fresh lemon juice
- 1/2 tsp. cornichon juice from jar
- 1/4 tsp. dried tarragon, basil, or parsley
- 1/2 tsp. ground red pepper in a small bowl.
- Salt and pepper to taste.

- 1/2 cup chopped drained canned artichoke hearts
- 4 ribs celery, chopped (about 1 cup)
- 1/4 tsp. ground black pepper

1. Preheat oven to 425 degrees F
- 14 tiny new potatoes (about 1 1/2 lbs total)
- 2 tablespoons Dijon-style mustard
- 1 tablespoon olive oil
- 2 teaspoons Old Bay seasoning
- 1 7-to -8 ounce package frozen peeled cooked shrimp, thawed, drained, and chopped
- 1/2 of an 8-ounce pakage cream cheese, softened
- 1 cup shreded Gouda cheese (4 ounces)
- 5 slices bacon, crisp-cooked, drained, and crumbled
- 1/4 cup snipped fresh chives (optional)
