Appetizer ( Smoked Salmon Log)

Can be made a day in advance Don't roll into nut until an hour before serving
- 8 ounces cream cheese
- 1 can ( l lb) salmon
- 2 tsp. minced onion
- 1/4 teas. liquid smoke
- 1 Tablespoon lemon juice (fresh)
- 1 Tablespoon Horseradish
- 1/4 teas. salt
- 1 cup chopped toasted pecans
- 2 Tablespoons chopped fresh parsley
Bread Pudding Banana Bread Pudding with Rum Sauce

Best Bread Pudding I have eaten and best rum sauce!! Fixed for Christmas one year
- 1/3 cup raisines or currants
- 2 tablespoons plus 14 cup dark rum
- 2 tablespoons (1/4 stick) butter
- 3 bananas, peeled, halaved crosswise and then lengthwise
- 5 tablespoons sugar
- 2 cups whipping cream
- 4 large eggs
- 1 teaspoon vanilla extrace
- 8 ounces firm white bread slices, crusts trimmed, each slice cut into 3 strips
- 1/2 cup chopped toasted pecans (asbout 2 ounces) (I like to use fresh white Italian Bread)
- Rum Sauce (See recipe)

- 1 tablespoon baking powder
- 1 cup Milk
- 1/2 teaspoon salt
- 4 tablespoons liquid butter blend

- 1 cup whole kernel corn drained

A really great appitizer for a party!
- 2 (8ounce) packages cream cheese, softened
- 3/4 cup butter, softened
- 1 teaspoon salt, divided
- 1/4 teaspoon pepper
- 1 1/3 cups sun-dried tomatoes in oil, drained
- 2 (3-ounce) package cream cheese, softened and divided
- 1/3 cup tomato paste
- 4 garlic cloves, chopped
- 1 1/2 cups firmly packed fresh basil
- 1/4 cup pine nuts
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1/4 cup grated Parmesan cheese
- Vegetable cooking spray
- Garnishes: fresh rosemary sprigs, sun dried tomatoes

- 3/4 cup walnut halves
- 1/3 cup shredded Gruyere cheese
- 1 tablespoon orange-blossom honey
- 1/8 teaspoon kosher salt

- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped celery
- 1 (14 ounce) can chicken broth
- 1 (10.75 ounce) can cream of mushroom soup
- 1 (10.75 ounce) can cream of chicken soup)
- 1 (l0-ounce) can diced tomatoes with green chilies, drained
- 1 ( 4.5-ounce can chopped black olives, drained
- 1/2 cup sour cream
- 1 teaspoon salt
- 3 1/2 cups chopped cooked chicken
- 2 cups shredded Cheddr cheese
- 1 (16-ounce) package angel hair pasta, cooked according to package directions
- 3.4 cup panko (Japanese bread crumbs)
- 1 tablespoon butter, melted

Found on back of Hershey's Cocoa can and the icing is from a friend
- 1 cup butter (use the real stuff)
- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- 3/4 cup Hershey's cocoa powder
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup copped walnuts (optional, can also use pecans)
- ICING
- 1 cup confectioners' sugar
- 3 tablespoons cocoa powder
- 1 tablespoon melted butter
- 2 tablespoons warm water
Finnish Meatballs in Cognac Sauce

Preheat the oven to 350 degreees F
- MEATBALLS:
- 450 g (1 lbs) ground pork and beef
- 1 dl (0.4) cups) creme fraiche
- 1/2 dl (0.2 cups) onion soup mix
- 1/2 dl ( 0.2 cups) dried fried onion
- a pinch of allspice
- THE SAUCE:
- 50 g (1/2 stick) butter
- 1 dl (O.4 cups) all purpose flour
- 2 dl ().4 cups) demi-glace
- 3 dl (1.25 cups) water
- 2 tbsp. beef fond or two beef stock cubes
- 1 dl(O.4 cups) cooking cream
- 1/2 dl(0.2 cups) cut brandy (1/4 VSOP cognac, 3/4 plain vodka)
- a pinch of crushed blackpeppercorns

- 1 tablespoon olive oil
- 1 large yellow onion chopped fine
- 1 teaspoon dried basil, crumbled
- 1 Bay leaf, crumbled
- 2- 3 cloves of garlic
- 3/4 teaspoon black pepper
- 1/2 ( I used 2 small) chicken breasts chopped fine.
- 1 can ( 1 lb) low sodium tomatoes chopped with their juices
- 2 tablespoon low sodium tomato paste
- 8 ruffled edge lasagna noodles
- 1/2 cup grated Parmesan cheese
- 1 cup part skim ricotta cheese
- 1/2 pound fresh spinach, trimmed and chopped or 1/2 of 10 ounce package frozen thawed and drained
- 1/4 teaspoon ground mace or nutmeg ( I used 1/4 teas of both)
- 1/4 teaspoon of cream of tartar.

- 1/2 cup pitted nicoise olives, oughly chopped
- 1 cup canned chickpeas, drained, rinsed and drained again

- 1/4 cup champagne vinegar
