Muffins, Cranaberry Orange Muffins

Really Good Made December 4, 2006
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspooon salt
- 1 cup granulated sugar
- 1 large egg
- 1/2 cup milk
- 1/2 cup sour cream
- 1/3 cup canola oil
- 1 1/2 cups fresh or frozen cranberries, chopped
- 1 tablespoon grated orange peel

- Icing:
- 2 1/2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/3 cup shortening
- 1 cup buttermilk
- Fillig 1/4 cup butter, softened( 1 teaspoon per biscuit)
- 1 cup and 2 tablespoons orange marmalade (1 1/2 tablespoons per biscuit)
- 1/4 cup brown sugar (1 teaspoon brown sugar)
- 2 1/2 cups powdered sugar
- 1/4 cup orange juice
- 1 teaspoon butter, softened
- 2 tablespoons cream cheese
- Dash salt
- 1/4 teaspoons vanilla
- 2 tablespoons orange zest

In the container of an electric blender, combine orange juice, basil, vinegar, salt, and pepper; pulse to combine
- 1/3 cup fresh orange jujice
- 1/3 cup minced fresh basil
- 2 tablespoons rice wine vinegar
- 1 1/4 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1/4 cup vegetable oil

Really easy and good! A favorite shrimp dip from the 60's
- 8 ounces cream cheese
- 1/2 cup of cocktail sauce (or 1/2 cup of ketchup and a Tablespoons or two of horseradish, to taste)
- Chopped cooked shrimp (4- 6 or 8 ounces)
Casserole (Chat n' Chew Macaroni Cheese) Dick loved!

Preheat the oven to 350 degrees F
- 1/2 pound butter, plus extra for the baking dish
- 1 1/4 pounds elbow macaroni
- 2 cups heavy cream
- 2 cups whole milk
- 1 small ( 1/4 to 1/3 pound) onion, diced small ( about 1/2 cup)
- 4 cloves garlic, minced
- 1 cup flour
- 5 cups ( 1 1/4 pounds) shredded sharp cheddar
- 8 slices American cheese, broken into small pieces
- 2 cups ( 1/2) pound grated Parmesan
- 3 tablespoons green hot chile sauce
- 1/4 teaspoon ground cumin
- Kosher salt
- Freshly ground pepper
- 1/2 cup seasoned bread crumbs
Quiche Shrimp and Artichoke

Saute shrimp, onions, and artichokes in butter that has been melted
- Bake shell to light brown before making quiche
- 1 1/2 cup shrimp cooked, peeled and devined
- 1/2 small onion, chopped
- 1 cup artichoke hearts, drained and chopped (use 15 ounce can for 2 quiches)
- 2 to 3 tablespoons buttter melted
- 1 1/3 cup swiss cheese grated
- 1 cup mild cheddar cheese grated
- 3 large eggs slightly beaten
- 1 1/4 cup sour cream
- dash salt
- dash garlic powder
- dash white pepper
- dash tabasco sauce
Shrimp, Butterflied Garlic Shrimp

First heat toaster oven to broil
- 1 small clove garlic, minced
- 1/2 small shallot, minced
- 1/2 tablespoon parsley, chopped
- 2 tablespoons butter, softened
- 6 medium shrimp, peeled and deveined
- fine sea salt and freshly ground pepper
- 1/2 lemon
Shrimp with coctail sauce (Ina Garten)

Cut the lemon in half and add it to a large pot of boiling salted water
- 1 lemon
- Kosher salt
- 2 pounds large shrimp in the shell (about 30)
- 1/2 cup chili sauce (recommended:Heinz
- 1/2 cup ketchup (recommended: Heinz)
- 3 tablespoons preparet horseradish
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon hot sauce (recommended: Tabasco)
Seafood, Linguine with Clam Sauce

1. Set a large pot of four quarts of water to boil (for the linguine)
- 4 tablespoons extra virgin olive oil
- 3 tablespoons butter (I used 6 tablespoons Butter)
- pinch of saffron
- 4 cloves garlic, finely chopped
- 1 shallot, finely chopped (or 1/3 cup finely chopped onion)
- 3 6.5 ounce cans chopped clams, drained, juice reserved (you should have about 1 1/2 cups of juice)
- 1/2 cup dry white wine (or chicken broth, if the wine flavor will touble your kids)
- 2 teaspoons Worcestrshire sauce
- 1/2 cup finely chopped parsley
- Salt to taste
- Freshly grated parmesan
- 1 pound of linguini, freshly cooked until just tender (be sure to salt the cooking water well)
Gumbo Big Easy Seafood Gumbo

THE ROUX Making a roux is not hard, but takes time and patience
- 1 cup vegetable oil
- 1 cup all-purpose flour
- 3 medium onions, chopped
- 3 green onions, chopped
- 2 large green peppers, chopped
- 2 stalks celery, sliced
- 4 cloves garlic, chopped
- 2 (14 1/2 oz,.) cans Italian-style tomatoes, undrained and chopped
- 2 (10 oz. ) packages frozen sliced okra, thawed
- 1 (6 ounce) can tomato paste
- 2 quarts waer
- 4 bay leaves
- 3 tablespoons lemon juice
- 2 teaspoons dried whole thyme
- 1 teaspoon salt
- 3/4 teaspoon pepper
- 1/2 teaspoon creole seasoning (see recipe below)
- 1/2 teaspoon red pepper
- 2 pounds medium-size fresh shrimp, peeled and deveined
- 1 12 oz. container fresh Standard oysters, undrained
- 1/3 cup chopped fresh parsley
- 1 pound fresh lump crabmeat
- Hot cooked rice
- CREOLE SEASONING
- Combing ingredients and store in an airtight jar or container
- 2 1/2 tablespoons paprika
- 2 tablespoons garlic powder
- 1 tablespoon onion powder
- 1 tablespoon dired oregano
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon cayenne pepper
