Herbed Risotto

- Ingredients
- 1/4 1/4 1/4 cup olive oil
- 1/2 1/2 1/2 cup yellow onion, finely chopped
- 1 1/2 1 1/2 1/2 cups Arborio rice
- 1/2 1/2 1/2 cup white wine
- 5 5 5 cups chicken or vegetable broth
- 2 2 2 Tbsp butter
- 1/2 1/2 1/2 cup Parmesan cheese
- to & pepper to taste
- 1 1 1 Tbsp fresh chopped parsley ( 1 tsp dry)
- 1 1 1 Tbsp fresh chopped oregano (1 tsp dry)
- 1 1 1 Tbsp fresh chopped basil (1 tsp dry)
- to and black pepper to taste
- Fresh parsley, chopped
- Procedures
- HOLD the broth warm in a saucepan.
- to to large bowl and garnish with parsley. Serve immediately. NOTE: Finished risotto is creamy and rice is firm.

Preheat oven to 375°F. Mix flour, cinnamon, baking soda and salt in medium bowl
- 2 cups flour
- 1 tablespoon McCormick® Cinnamon, Ground
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup firmly packed light brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 2 teaspoons McCormick® Pure Vanilla Extract
- 1 1/2 cups dried cherries
- 1 cup flaked coconut
- 1 cup quick-cooking oats
- 1 cup white chocolate chips
Orange Creamsicle Smoothie

Tomato Salad with Red Onion, Dill and Feta

This colorful and refreshing salad is perfect for a healthy snack or side dish
- 1 pound tomatoes, 1 red and 1 orange
- 1 clove garlic
- 2 tablespoons red wine vinegar
- 1/4 cup extra virgin olive oil
- 1 red bell pepper, seeded and cut into 1-inch chunks
- 1/4 pound cucumber, thinly sliced
- 1 cup kalamata olives, pitted
- 1/4 cup fresh dill, roughly chopped
- 1/4 cup fresh mint, roughly chopped
- 1 cup crumbled feta cheese
Jalapeno Poppers

In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits
- 6 oz cream cheese, softened
- 1/2 (8 oz) package shredded Cheddar cheese
- 1/2 T bacon bits
- 6 jalapeno peppers, seeded & halved

- 1/2 c flour
- 1/2 c dry bread crumbs
- 4 cups of oil for frying

- 1 medium baking potato
- 1 teaspoon olive or vegetable oil
- 4 oz beef flank steak, cut across grain into thin bite-size strips

- 2 T garlic, finely chopped

- 1/2 fresh lemon, juice only

- 1/2 c softened butter
- 1 T parsley
- 1/2 c grated Parmesan cheese
Lighter General Tso's Chicken

- 1 1/4 cups long-grain brown rice
- 1/4 cup cornstarch
- 1 pound snow peas, trimmed and halved crosswise
- 4 garlic cloves, sliced
- 2 teaspoons fresh ginger, grated and peeled
- 3 tablespoons light-brown sugar
- 2 tablespoons soy sauce
- 1/2 teaspoon red-pepper flakes
- 2 large egg whites
- Coarse salt and ground pepper
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons vegetable oil, such as safflower
