Chocolate Covered Strawberry Tarts

- 1/2 cup pine nuts
- 2 cups fresh basil, chopped
- 3 garlic cloves, chopped

Jalapeno Sliders (Rachael Ray)

Preheat a griddle or grill to medium-high heat
- 3 large jalapeño peppers
- 1 Fresno chili pepper, sliced into 1/8-1/4-inch slices
- 1 T extra virgin olive oil (EVOO) or vegetable oil, plus more for drizzling
- 8 oz cream cheese, softened
- 2 T yellow onion, grated
- 1 large clove garlic, grated or minced

Vegetable Frittata

Use any of your favorite vegetables in this easy to make vegetable frittata
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 medium zucchini, halved lengthwise and cut into 1/4-inch thick slices
- 1 small red bell pepper, coarsely chopped

- 1/4 cup milk
- 1 tablespoon McCormick® Perfect Pinch® Vegetable Seasoning

Italian White Beans with Chicken

Emeril's Kicked-Up Tuna Melts

Heat broiler, with rack in highest position
- 4 cans (5 ounces each) solid white tuna packed in water, drained
- 1/3 cup mayonnaise, plus more for spreading
- 1/4 cup finely chopped red onion
- 4 teaspoons capers, rinsed and drained
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon coarse salt
- 1 teaspoon ground pepper
- 1/4 teaspoon dried oregano, crumbled between your fingers
- 4 slices crusty bread
- 8 thin slices tomato
- 4 slices provolone
Fish Tacos

Prepare the salsa. Either use store bought or make your own
- 1 lb of very fresh fish fillets - (Good fish for tacos are firm fish like swordfish or halibut)*
- Salt and pepper
- Olive oil
- 1 doz corn tortillas (3 tortillas per person)
- Vegetable oil or butter (optional, depending on how you heat your tortillas)
- Salsa - (see Mango Salsa Recipe)
- 1 ripe Avocado
- Cabbage (or iceberg lettuce)
- Cider vinegar
- Salt
Double Chocolate Black Eyed Susan's

Heat oven to 350°F. Lightly grease cookie sheet or line with parchment paper
- 1 1 19.75 package (18.25 oz. or 19.75 oz.) fudge marble cake mix
- 1 1 1 egg
- 1/3 1/3 1/3 cup vegetable oil
- 4 4 4 tablespoons water, divided
- 1 1 1 cup HERSHEY'S Mini Chips Semi-Sweet Chocolate
- to 350°F. to 350°F. Lightly grease cookie sheet or line with parchment paper.
- 10 to 12 to 36 or until very lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Makes about 36 cookies.
