Cranberry Whole-Grain Muffins

Yield: 12 muffins
- MUFFINS
- 1 1/2 cups (6 ounces) King Arthur Traditional Whole Wheat Flour or King Arthur 100% White Whole Wheat Flour
- 3/4 cup (2 5/8 ounces) quick-cooking oats
- 1/4 cup (1 3/4 ounces) buttermilk powder or nonfat dry milk
- 2/3 cup (4 5/8 ounces) sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup fresh or frozen cranberries,* chopped
- 1/2 cup (2 ounces) chopped pecans or walnuts (optional)
- 1 tablespoon orange zest (finely grated orange peel)
- 2 large eggs
- 3/4 cup (6 ounces) milk
- 1/3 cup (2 1/4 ounces) vegetable oil or melted butter
- GLAZE
- 2 tablespoons (1 ounce) orange juice
- 3 tablespoons (1 1/4 ounces) sugar or 1 cup (4 ounces) confectioners' sugar, sifted
- *For a sweeter muffin, substitute 1 cup sweetened dried cranberries.
Sweet Cheese Delights

In large bowl, beat cream cheese and sugar with electric mixer on medium speed until fluffy
- 2 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 egg yolk
- 1 teaspoon vanilla
- 2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls
- 1 cup chopped pecans
- 1/2 cup packed brown sugar
- 2 tablespoons butter, melted
- 2 teaspoons ground cinnamon
- Powdered sugar, if desired

- 3/4 cup ( 1 1/2 sticks, 6 ounces) unsalted butter
- 1 1/2 cups brown sugar
- 2 teaspoons cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon vanilla
- 1 large egg
- 1 1/3 cups (4 5/8 ounces) old-fashioned rolled oats
- 1 1/4 cups King Arthur Traditional Whole Wheat Flour
- 2 cups dried fruit: cranberries, diced apples, chopped dates, raisins, chopped apricots, or the dried fruits of your choice
- 1 cup (3 3/4 ounces) diced pecans or walnuts

Family-Style French Toast with Strawberry Syrup

For best results, slice the bread the day before and let it dry out, uncovered, at room temperature
- 1 lb. strawberries, hulled
- 1/2 cup maple syrup
- 5 slices day-old brioche or challah, each 5 inches high, 3
- inches wide and 1 1/2 inches thick
- 3 eggs
- 1 cup milk
- 3 Tbs. granulated sugar
- 2 tsp. vanilla extract
- Zest of 1 orange
- Pinch of kosher salt
- 1 Tbs. plus 1 tsp. unsalted butter

Honey Chicken and Corn Rafts

- 24 oz boneless skinless chicken breasts, cut into 3/4-inch cubes
- 2 tablespoons honey
- 1 bag (11.8 oz) Green Giant™ Seasoned Steamers™ frozen honey roasted sweet corn
- 6 tablespoons cooked real bacon pieces (from 2.8 oz package)

Frozen Yogurt Brunch Bundt

- 2 cups assorted berries (I used blueberries, strawberries, raspberries and blackberries)

Crunchy Chocolate Peanut Butter Cups

- 2 tablespoons butter
- 2 tablespoons honey or corn syrup
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter
- 1/2 cup glazing sugar or confectioners' sugar
- 1/2 cup chopped salted peanuts, crumbled shortbread cookie, or puffed rice cereal

- 8 ounces semisweet chocolate chips or chopped semisweet chocolate
- 1 1/2 ounces crunchy toffee bits

- 1 5/8 ounces cream-filled chocolate sandwich cookies, broken into small chunks
- 1 ounce salted pretzels, broken into pieces
