Lemon-Ginger Apple Pie Squares

This recipe is best served the day it's made
- 3 cups all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoons grated lemon peel
- 2/3 cup butter
- 2/3 cup shortening
- 2 egg yolks
- 3/4 to 1 cup milk
- 1 1/2 cups corn flakes cereal, crushed to 2/3 cup
- 6 medium apples, peeled, thinly sliced (8 cups)
- 3/4 cup sugar
- 1/4 cup finely chopped crystallized ginger
- 2 tablespoons lemon juice
- 2 egg whites, beaten
- 3 tablespoons sugar
Ground Beef and Twice-Baked Potato Pie

Heat oven to 350°F. In large bowl, mix beef, onion, bread crumbs, sage, salt and egg until well blended
- 1 lb lean (at least 80%) ground beef
- 1/4 cup chopped onion
- 1/4 cup Progresso™ plain bread crumbs
- 1/2 teaspoon dried sage leaves
- 1/2 teaspoon salt
- 1 egg
- 1 package (1 lb 8 oz) refrigerated garlic mashed potatoes
- 1 cup shredded Cheddar cheese (4 oz)
- 1/4 cup chopped fresh tomato, if desired
- 2 slices precooked bacon, chopped, if desired
- 2 medium green onions, chopped (2 tablespoons), if desired
Apple Toddy

In an 8-oz. glass, combine the Calvados and apple syrup
- 1/4 cup Calvados or applejack
- 1/4 cup apple syrup
- 1/4 to 1/2 cup hot water
- 4 or 5 thin apple slices
- 1 whole nutmeg for grating
BACON CHEESE POTATOES

Layer half of the bacon, onions, potatoes, and cheese in the crockpot
- 1/4 pound bacon, cooked and diced
- 1 small onion, thinly sliced
- 6 – 8 red potatoes, quartered
- 1/2 pound cheddar cheese, thinly sliced or shredded

Fresh Fig Tart with Amaretti Crust

Put the dried figs in a small bowl
- 4 dried figs, preferably sulfite free, chopped
- 3 Tbs. Grand Marnier
- 1 1/4 cups all-purpose flour, plus more as needed
- 3/4 cup whole amaretti cookies
- 1 tsp. aniseed
- 1/4 tsp. salt
- 7 Tbs. cold unsalted butter, cut into 1/2-inch pieces
- 4 to 5 Tbs. ice water
- 3/4 cup heavy cream
- 1/3 cup plus 1 Tbs. sugar
- 1 tsp. finely grated orange zest
- 1/2 lb. fresh black Mission figs (about 8 figs), cut lengthwise into quarters

- 1 cup (8 ounces) lemon, vanilla, or other fruit-flavored yogurt, regular or low-fat (not nonfat)

- 1/4 cup (1/2 stick, 2 ounces) butter, melted
- 3/4 cup (3 to 4 ounces) chopped dried fruit; apricots, cherries, raisins, pineapple, or the dried fruit of your choice
- 2 large eggs
- 1 1/2 cups (6 1/4 ounces) King Arthur Unbleached All-Purpose Flour
- 3/4 cup (3 ounces) Hi-maize® Natural Fiber*
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- TOPPING
- 1/4 cup (1 ounce) King Arthur Unbleached All-Purpose Flour
- 1/4 cup (1 3/4 ounces) sugar
- 1/2 cup barley flakes or old-fashioned rolled oats

- 2 1/2 cups (1 large) leek, sliced, washed, and drained
