Cheesy Apple Sandwich

- 4 apple slices (these act as the "bread")
- 3 tbsp low-fat ricotta cheese
- 10 almonds
- Lemon juice
Butter-Braised Fingerlings

Scrub the fingerlings, then cut into approximately 1-inch pieces
- 1 1/2 pounds fingerling potatoes (I've used Russian Banana, Purple Fiesta, and French Fingerlings with good results)
- 1 stick (1/2 cup) unsalted butter, at room temperature
- 1 teaspoon kosher salt
- 1/4 to 1/2 teaspoons freshly ground black pepper
- 1 to 1 1/2 tablespoons small sage leaves (or coarsely chopped large ones)
- Leaves from an 8-inch sprig of rosemary (about the same amount as the sage)
- 1 tablespoon minced garlic (2 large or 3 medium cloves)
- 1 1/2 tablespoons lemon juice (or sherry or malt vinegar)
- Chopped parsley and/or minced chives or scallions and/or rosemary or borage blossoms to garnish
Orange-Cranberry-Nut Fruit Cake

- 8 1/2 ounces dried cranberries or orange-flavored dried cranberries
- 8 1/2 ounces dried fruit blend or dried apricots, chopped
- 4 ounces water, cranberry juice, or brandy
- 10 ounces candied red cherries

- 8 ounces unsalted butter
- 14 ounces sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon orange oil or 1/8 to 1/4 teaspoon Fiori di Sicilia, optional
- 4 large eggs
- 15 3/4 ounces Unbleached All-Purpose Flour
- 8 ounces orange juice
- 7 1/2 ounces diced pecans or walnuts, optional

The Best Apple Pie

To make the crust: Whisk together the flour and salt, then cut in the butter until crumbly
- CRUST
- 2 cups (8 ounces) King Arthur Mellow Pastry Blend or King Arthur Unbleached All-Purpose Flour
- heaping 1/2 teaspoon salt
- 1/2 cup (1 stick, 4 ounces) unsalted butter
- 3 to 5 tablespoons (1 1/2 to 2 1/2 ounces) ice water
- FILLING
- 3 1/4 pounds (about 9 whole apples, 10 cups) Cortland or other baking apples, peeled, cored and sliced
- 3/4 cup (5 1/4 ounces) sugar
- 1 1/2 teaspoons apple pie spice
- 1/4 cup (2 ounces) boiled cider
- 1 tablespoon rum (optional)
- 1/4 cup (1 5/8 ounces) King Arthur Pie Filling Enhancer
- 1/8 teaspoon salt
- 2 teaspoons vanilla extract
- juice of 1/2 lemon (about 2 tablespoons)
Strawberry Jam
