Apple-Roasted Pork Chops with Roast Applesauce

To marinate the pork chops, place the chops in a large, heavy-duty sealable plastic bag or a large nonreactive dish
- For the marinade:
- 6 loin pork chops, each 7 to 8 oz. and 1 inch thick, trimmed of fat and edges scored
- 2/3 cup apple cider
- 1 tsp. olive oil
- 1 small yellow onion, sliced
- 1 Tbs. fresh thyme leaves
- 2 garlic cloves, minced
- 1 tsp. peppercorns
- Salt and freshly ground pepper, to taste
- 2 tart green apples
- 1 Tbs. unsalted butter
- 1 Tbs. olive oil, or as needed
- 1 generous cup dried apples
- 1 yellow onion, sliced
- 1/4 cup apple cider
- 1/4 cup Calvados or other dry apple brandy
- For the roast applesauce:
- 8 to 10 tart apples, half green and half red, quartered
- 3/4 cup water
- Pinch of salt
- 1/4 cup sugar, or to taste
- 1/2 tsp. ground cinnamon
Leek and Red Pepper Mini-Quiches

To make the cheddar pastry, in a food processor, pulse the cheese until crumbly
- FOR THE CHEDDAR PASTRY:
- 1/4 lb. white cheddar cheese, cut into chunks
- 1 1/2 cups all-purpose flour, plus more as needed
- 1/4 tsp. salt
- 8 Tbs. (1 stick) chilled unsalted butter, cut into pieces
- 1 egg, lightly beaten
- 2 to 3 Tbs. cold water
- FOR THE FILLING:
- 1 1/2 Tbs. unsalted butter
- 1 leek, white portion only, or 2 large shallots, finely chopped
- 1/2 small red bell pepper, seeded and cut into 1/4-inch dice
- 1/4 lb. dry-aged white cheddar cheese, grated
- 2 eggs
- 1 1/2 cups heavy cream
- 3/4 tsp. Dijon mustard
- 3/4 tsp. salt
- 1/8 tsp. cayenne pepper

- 3 large eggs, separated
- 2 cups buttermilk

- 1 teaspoon espresso powder, optional; for added kick
- 1 can (14 ounces) sweetened condensed milk
- 1 cup heavy or whipping cream*
- 1 teaspoon vanilla extract
- Substitute milk, if desired, for a lower-fat, less-rich drink.
Self-Rising Cream Biscuits for Shortcake

- 1/2 to 1 ounce melted butter, optional, for brushing on top

Apple Fritter Rings with Caramel Sauce
