- 2 cups cornmeal
- 1 cup flour
- 1 tbs. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1/4 cup oil
- 3 eggs
- 1 1/3 cup buttermilk
- 3/4 cup water
- Water and a thin batter seems to me to be the key factor in having a crispy crust.
- For sweet cornbread add 6 tbs. sugar.

Preheat oven to 400F. Combine wheat bran, flour, baking soda and baking powder
- 1 cup Wheat Bran
- 1 1/2 cups Whole Wheat Flour
- 1/2 cup Raisins (Unsulfured)
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 cup Milk
- 1/2 cup Molasses (or Honey)
- 3/4 cup Applesauce
- 1/4 cup chopped Nuts
- 2 Tbsp. Oil
- 2 Eggs, beaten
Oatmeal Raisin Cookies

You've made oatmeal-raisin cookies before, so why try these? Because they're moist, chewy, and loaded with raisins
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 cup dark brown sugar, firmly packed
- 2 large eggs
- 2 teaspoons vanilla
- 3 cups oats (not instant)
- 1 1/2 cups raisins
Mexican Chicken and Rice

Bake at 450 until done about 10 minutes
- Chicken Breast pounded flat
- Sear on a hot griddle.
- Put in a 13x9 inch pan.
- Sprinkle chopped chipotle peppers in adobe sauce on breast.
- Place Mexican blend cheese and bacon bits on top.
- Pour a can of Rotel tomatoes on top.
- If too dry looking pour some chicken into pan.

- 1/2 red onion, chopped
- 1 yellow squash, thinly sliced
- 1 zucchini, thinly sliced
- 1/2 cup dried cranberries
- 2 cups chicken broth
- 1 1/2 cups couscous

Heat oven to 375. Mix thoroughy butter, sugars, egg and vanilla
- 1/2 cup shortening (I like to use butter)
- 1/2 cup sugar
- 1/2 cup brown sugar (packed)
- 1 egg
- 1/2 tsp. vanilla
- 1 cup flour
- 1/2 tsp. soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1 cup quick cooking oats
- 1 cup Wheaties or Total (I use Cornflakes)
- 1/2 cup coconut
Penne Rigate with Chicken Mushrooms and Asparagus

Cook pasta , but after the the first 8 minutes of cooking add cleaned and trimmed asparagus to boiling pasta
- 1 pd. fresh or frozen asparagus
- (might try with broccoli also)
- 1 box (16 oz) Penne Rigate pasta
- 2 tbs. olive oil
- 2 cloves garlic, chopped
- 1 box (8oz) sliced mushrooms
- 2 cans (4.5 ox each) chunk chicken breast
- (I used fresh chicken simmered in skillet)
- 1/2 cup HEB Fresh Garlic Caesar Dressing
- Salt and Pepper
- 1/2 cup shredded Parmesan Cheese
