Bulgur Meatloaf

Place mushrooms in a small bowl and cover with warm water; let stand for 30 minutes
- 1 cup dried mushrooms, such as shiitake, porcini or chanterelle
- 1 cup bulgur, (see Ingredient Note)
- 1 cup boiling water
- 2 teaspoons extra-virgin olive oil
- 1 small onion, chopped
- 1 stalk celery, chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 15-ounce can diced tomatoes, drained
- 1/2 cup nonfat evaporated milk
- 1/2 cup ketchup
- 1 large egg
- 2 large egg whites
- 1 1/2 pounds 90%-lean ground beef
- 1 cup fine dry breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 teaspoons dried thyme
- 1/2 teaspoon salt

Cream together butter and sugar
- 3 sticks butter or margarine
- 2 cups brown sugar
- 2 eggs
- 1/2 cup dark molasses
- 1/2 tsp. black pepper
- 1/4 tsp. allspice
- 1 tsp. cloves
- 2 tsp. cinnamon
- 2 tsp. ginger
- 4 tsp. soda
- 4 1/2 cups flour
Mexican Beef and Bean Casserole

Cook beef in skillet until brown, then drain
- 1 lb ground beef
- 2 cans pinto beans, drained ( or cooked dried beans)
- 1 (8 ounce) can tomato sauce
- 1/2 cup salsa
- 1 teaspoon chili powder
- 1 cup shredded cheddar cheese

Preheat oven to 400. Add all ingredients except topping into a 13x9 inch pan
- Topping:
- 2 cups cooked chicken cut into chunks
- 1 can broth
- 2 cans of cream of chicken or chicken soup (or one of each)
- 1 (16 0z.) bag frozen vegetables
- 1 cup milk
- 1 cup flour
- 1 stick butter
Bean Soup With Kale

1.In a large pot, heat olive oil
- Ingredients:
- "White beans, cannellini or navy, and chicken broth form the base of this soup made with fresh kale and tomatoes."
- 1 tablespoon olive oil or canola oil
- 8 large garlic cloves, crushed or minced
- 1 medium yellow onion, chopped
- 4 cups chopped raw kale
- 4 cups low-fat, low-sodium chicken or
- vegetable broth2 (15 ounce) cans white beans, such as
- cannellini or navy, undrained
- 4 plum tomatoes, chopped
- 2 teaspoons dried Italian herb seasoning
- Salt and pepper to taste
- 1 cup chopped parsley
Pita Chips Recipe

Preheat oven to 375F. Cut pita bread 1/4 and pull apart bread so you have 8 triangles
- (1 serving or 8 chips)
- 1 small 100% Whole Wheat Pita bread
- olive oil cooking spray (or any vegetable oil)
