- BRINE:
- 10 whole Turkey Legs
- 4 quarts Water
- 1 cup Kosher Salt
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 Tablespoons Seasoning Blend (I Used Montreal)
- 1 whole Bay Leaf
- Dry Rub
- 2 Tablespoons Chili Powder (less If You Don't Like Things Too Spicy!)
- 2 teaspoons Seasoning Blend (I Used Montreal)
- 2 teaspoons Paprika
- 2 teaspoons Onion Salt
Butternut Squash Soup

Directions In a large saucepan, saute onions in margarine until tender
- 6 tablespoons chopped onion
- 4 tablespoons margarine
- 6 cups peeled and cubed butternut squash
- 3 cups water
- 4 cubes chicken bouillon
- 1/2 teaspoon dried marjoram
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon ground cayenne pepper
- 2 (8 ounce) packages cream cheese
Creamy Cilantro Dressing ( Diet)

Combine all ingredients in a small bowl
- 1/2 cup nonfat buttermilk
- 2 Tbsp. thinly sliced green onion
- 2 Tbsp. nonfat sour cream
- 1 Tbsp. snipped fresh cilantro
- 1 Tbsp. dijon-style mustard.
Biscuits (Mom's Recipe)

Preheat oven to 425. Mix dry ingredients
- 4 cups flour
- 6 tsp. baking powder
- 1/4 tsp. baking soda
- 2 tsp. salt
- 2/3 cup Crisco
- Around 2 1/2 cups of Buttermilk
Taco Grande Pizza

1. To make pizza crust, combine warm water and salt in a mixing bowl
- Yield:
- A homemade knockoff of Papa Murphy's Taco Grande Pizza: Buttery pizza crust topped with salsa-pizza sauce, taco-seasoned meat, mozzarella cheese, black olives, green onions, and diced tomatoes
- 12 slices
- Ingredients:
- Pizza crust ingredients:
- 1 cup warm water
- 1/2 teaspoon salt
- 2 1/2 cups (approximately) all-purpose flour
- 1 tablespoon active dry yeast
- Butter, for greasing the pan
- Taco meat* ingredients:
- 1 pound ground beef
- 1 clove minced garlic
- 1/2 cup chopped onion
- 1/2 teaspoon salt
- dash of black pepper
- 1 teaspoon ground cumin (I like to use freshly ground cumin!)
- 1 teaspoon ground chili powder
- Tapatio, or your favorite hot sauce, to taste
- Pizza toppings:
- 1/2 cup pizza sauce
- 1/2 cup salsa or picante sauce of your choice
- 12-16 ounces (3-4 cups) shredded mozzarella cheese
- 1 cup thinly sliced black olives
- 1/2 cup diced green onions
- 1/2 cup diced Roma tomatoes
- 1/2 cup shredded cheddar cheese, optional
Crock Pot Mexican Fiesta ( works well in oven also)

Spray crock pot with Pam. Completely cover bottom of the pot with slightly crushed tortilla chips
- 1 bag regular size tortilla chips
- 1 pound lean ground beef
- 1 can Ranch Style Beans
- 3 cups grated cheddar cheese
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can Rotel tomatoes and chilies
- 2 tsp. chili powder
- 1/2 cup onion, chopped
Strawberry Pie

Mix sugar, water and cornstarch into a saucepan and bring to a boil
- 1 cup sugar
- 1 cup water
- 2 tbs. cornstarch
- 1/2 box strawberry jello(3 oz.)
Southwestern Grilled Chicken Salad

To make the dressing: In a small bowl, mix the ranch dressing, salsa, and cilantro until blended
- Dressing
- 1/4 cup light ranch dressing
- 1/4 cup mild green salsa
- 2 tablespoons chopped fresh cilantro
- Salad
- 1 tablespoon chili powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 pound thin chicken breast slices or chicken tenders
- 1 lime, quartered
- 6 cups shredded romaine lettuce
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup corn kernels
- 1 medium tomato, chopped
- 1/4 cup thinly sliced red onion
Homemade Pizza Sauce

Mix all ingredients in a bowl
- 16 oz. tomato sauce
- 4 oz. tomato paste
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp garlic powder
- 1 tsp onion powder
SUPER MOIST BANANA BREAD

Butter a 9 x 5 x 3 inch loaf pan
- 1/2 c. butter, room temperature
- 1 c. sugar
- 3 med. sized ripe bananas, mashed
- 2 eggs, separated
- 1/2 tsp. vanilla
- 1/2 tsp. lemon juice
- 1 tsp. baking soda
- 1 1/2 c. unbleached flour
- 1 1/2 tbsp. hot water
