Spaghetti and Meatball Soup

*Email Address: *Your Email Address: Bring water to a boil in large saucepan
- 1 Bring water to a boil in large saucepan. Add spaghetti and meatballs; cook about 10 minutes or until spaghetti is tender. Do not drain.
- 2 Stir in spaghetti sauce. Cook until thoroughly heated. If desired, sprinkle individual servings with grated Parmesan cheese.
Cinnamon Pecan Coffee Cake (Longtime Family Favorite)

Preheat oven to 325 Mix butter and sugar until barely mixed
- Topping:
- 1 cup butter
- 2 cups sugar
- 3 eggs
- 2 tsp. vanilla
- 2 cups flour
- 1 tsp. baking powder
- 1 cup sour cream
- 1/2 cup chopped pecans
- 1/2 cup brown sugar
- 2 tbs. cinnamon
- Glaze:
- 1/2 cup powdered sugar
- 1 to 2 tsp. milk
Chorizo Bean Dip Recipe

Directions Crumble beef and chorizo into a large skillet; add onion and taco seasoning
- 1 pound ground sirloin
- 1/3 pound uncooked chorizo or bulk spicy pork sausage
- 1 medium onion, chopped
- 1 envelope taco seasoning
- 2 cans (16 ounces each) refried black beans
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 1-1/3 cups salsa
- 2 cans (2-1/4 ounces each) sliced ripe olives, drained
- 2 cups guacamole
- 6 green onions, thinly sliced
- 1 cup (8 ounces) sour cream
- 1/2 cup minced fresh cilantro
- 3/4 cup jalapeno-stuffed olives, sliced

- 1 can (15 ounces) black-eyed peas, drained and rinsed
- 1 tomato, diced (3/4 cup)
- 1/2 large red onion, thinly sliced
- 1 garlic clove, minced
- 1 tablespoon coarsely chopped cilantro
- 1 tablespoon red-wine vinegar
- 1 teaspoon Dijon mustard
- 3 tablespoons extra-virgin olive oil
- Coarse salt and freshly ground pepper
- 6 cups baby spinach
- 2 cups baby red mustard greens
Pork Chalupas

Directions 1.Place the roast inside a slow cooker coated with cooking spray
- 1 (4 pound) pork shoulder roast
- 1 pound dried pinto beans
- 3 (4 ounce) cans diced green chile peppers
- 2 tablespoons chili powder
- 2 tablespoons ground cumin
- 2 tablespoons salt
- 2 tablespoons dried oregano
- 2 tablespoons garlic powder
- 12 flour tortillas
Grilled Fruit

If using wooden skewers, soak them in water for at least 30 minutes
- Fruit to Grill:
- 4 (10 inch) skewers
- 1/2 cup brown sugar
- 1/4 cup water
- 1 tsp. cinnamon
- orange zest from half an orange
- Pineapple chunks
- nectarines or peaches cut into 1 inch chunks
- mango, cut into 1 inch chunks
- Sweet Yogurt Sauce:
- 1 (8oz) vanilla yogurt
- juice from one orange
- 1 tbs. of the above brown sugar mixture
Chai-Chocolate Chip Biscotti Recipe

In a large bowl, combine the first eight ingredients
- 2-1/3 cups all-purpose flour
- 1 cup sugar
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cardamom
- 1/4 cup strong brewed chai tea, room temperature
- 1 egg
- 1 egg white
- 1 tablespoon fat-free milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup miniature semisweet chocolate chips
Smores Bars

Heat oven to 375°F. In large bowl, stir together cookie mix and crumbs
- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
- 1 cup graham cracker crumbs
- 1 cup butter or margarine, melted
- 3 cups milk chocolate chips (18 oz)
- 4 1/2 cups miniature marshmallows
Chickpea Salad

Directions: 1.Combine all of the ingredients in a large bowl and stir together
- Ingredients:
- Chickpea Salad
- 1 can of chickpeas (about 15 oz), rinsed and drained
- 1 can of artichokes, roughly chopped
- 1/2 cup of kalamata olives, roughly chopped
- 1/2 cup of feta (I used reduced fat), diced
- 1/2 cup of sun-dried tomatoes, chopped
- 2 tbls basil, chopped
- 1 - 2 tbls extra virgin olive oil
- 1 tbls red wine vinegar
- 1 tbls lemon juice, optional (just add a little vinegar if you don't have lemon)
- Salt & Pepper to taste

- 1 small instant vanilla pudding
