Cook pasta, and allow to cool
- 1 (16 oz) pkg. uncooked penne pasta
- 1/4 pd. cooked bacon, crumbled
- 1 pd. cooked shrimp
- 2 avocados - peeled and diced
- 1 cup shredded Cheddar cheese
- 1 cup mayonnaise
- 1/4 cup lemon juice
- 2 tomatoes, diced
- 1 tsp. crushed red pepper
- 4 cups shredded lettuce

- 1/3 cup olive oil
- 1 package McCormick® Gourmet Sweet Basil & Oregano Bruschetta Chicken Recipe & Seasoning Mix
- 1 medium eggplant (1 pound), peeled and cut into 1-inch cubes
- 2 medium zucchini or yellow squash (1 pound) cut into 1-inch cubes
- 5 plum tomatoes (1 pound), quartered lengthwise
- 1 medium red bell pepper, cut into 1-inch cubes

Bulgur Barbecue

In a saucepan, bring 2 cups water to a boil
- 2-3/4 cups water, divided
- 2/3 cup bulgur
- 1-1/2 pounds lean ground beef (90% lean)
- 1-1/2 cups chopped celery
- 1 large onion, chopped
- 1 can (8 ounces) tomato sauce
- 1/2 cup packed brown sugar
- 1/2 cup ketchup
- 1 tablespoon white vinegar
- 1/2 teaspoon prepared mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 12 hamburger buns, split
