Apple Upside Down Cake

Last year my father got it in his head to make an apple upside down cake
- 8 Tbsp (1 stick) unsalted butter, softened
- 1 1/4 cups white, granulate sugar divided (1/2 cup and 3/4 cup)
- 1 1/2 pounds Braeburn, Jonagold, or Golden Delicious apples (about 4 medium), peeled, quartered, cored, each quarter cut into 2 wedges
- 3/4 cup flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup cornmeal
- 1/2 cup boiling water
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/3 cup whole milk
- 1-9-inch cake pan with 1 1/2-inch high sides

Preheat oven to 400 degrees
- One 18.25-oz. box devil's food cake mix
- One 15-oz. can pure pumpkin (Libby's is the best!)

- 2 cups chopped tomatoes

- Optional: lemon wedges, additional salt and black pepper
Biscuits and Sausage Gavy

Crumble and cook sausage in a large skillet over medium heat until browned
- 1 pound roll pork breakfast sausage
- 6 Tbs. shortening
- 1/2 cup all-purpose flour
- 1 -12 oz can evaporated milk
- 4 1/2 cups water
- Salt and pepper to taste (Start with 1 tsp. salt and 1/8 tsp. pepper and go from there)

Stir up a no-bake bar that's rich in high-fiber cereal and apples

- 3 cups Fiber One® Honey Clusters® cereal
- 1/4 cup roasted sunflower nuts
- 1/2 cup corn syrup or honey
- 1/4 cup packed brown sugar
- 1 cup dried apple slices, coarsely chopped
- 1/2 teaspoon ground cinnamon
- 1/2 cup peanut butter
Chocolate Baked Cake Donut

Preheat the oven to 325 degrees
- 1 1/2 cups all-purpose flour
- 1/3 cup cocoa
- 1 teaspoon baking powder
- 1 pinch salt
- 2 large eggs
- 2/3 cup granulated sugar

- 1/2 cup milk
- 2 tablespoons butter, melted
- For the glaze
- 1 cup powdered sugar
- 2 tablespoons water
- 1/2 teaspoon vanilla
Fried Rice

2 ea eggs, well beaten w/2 Tbsp water Directions In hot pan or wok add oil, bacon
- 2 Tbsp Peanut Oil
- 1 Tbsp Garlic, minced
- 2 slices Bacon, small diced
- 1/2 cup Onions, white, small diced
- 1/4 cup Peppers, red and/or green, small diced
- 1/4 cup Carrots, small diced
- 2 ea eggs, well beaten w/2 Tbsp water
- 4 cups rice, cooked dry
- 1/4 cup Green onions, chopped
- 2 Tbsp Soy sauce
- to taste salt and pepper (white pepper is best)
- 1/2 cup peas, frozen green type, thawed
Go for the Grains Casserole

In a large bowl, combine the carrots, corn, onion, barley, bulgur, parsley, salt and pepper
- 5 medium carrots, thinly sliced
- 2 cups frozen corn, thawed
- 1 medium onion, diced
- 1 cup quick-cooking barley
- 1/2 cup bulgur
- 1/3 cup minced fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups vegetable broth
- 1 can (15 ounces) black beans, rinsed and drained
- 1-1/2 cups (6 ounces) shredded reduced-fat cheddar cheese
Fruit and Berry Dessert

Eat and Enjoy
- Combine blueberries, bananas, peaches and strawberries. Sprinkle with some sugar and put into the fridge.
- Serve with Cool Whip and a sprinkle of cinnamon.
