Cranberry Orange Muffins

1. In large mixing bowl, combine first five ingredients
- Yield:
- A light and fluffy muffin bursting with zesty orange and tangy cranberries
- 24 muffins
- Ingredients:
- 2 cups flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon grated orange peel
- 2/3 cup freshly-squeezed orange juice
- 2 eggs, beaten
- 6 tablespoons butter
- 1 1/4 cups fresh cranberries, whole or coarsely chopped
- 1/2 cup walnuts, optional
Roasted Broccoli or Cauliflower

Preheat oven to 450°F. Toss broccoli and 3 tbsp
- 1 1/4 pounds broccoli crowns, cut into florets (about 8 cups)
- 3 1/2 tbsp. olive oil, divided
- 2 garlic cloves, minced

- 1 teaspoon butter or 1 teaspoon margarine, softened
- 1 teaspoon margarine, softened
- 1 cup whipping cream
- 1/3 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cloves garlic, crushed
- 6 medium potatoes
- 1 cup shredded swiss cheese (4 ounces)
- 1/4 cup shredded parmesan cheese
Baked Taco Ring

Directions Set oven to 375°f
- 1/2 lb lean ground beef, cooked ( can use more ground beef)
- 1 (35 g) packages taco seasoning mix ( or Recipe #76616)
- 1 -1 1/2 cup cheddar cheese, shredded
- 2 tablespoons water
- 2 (8 ounce) packages crescent roll dough
- 1 whole medium green bell peppers ( do not chop)
- 1/2 head lettuce, shredded
- 1 large tomatoes, coarsely chopped, for garnish
- 1 small onions, chopped, for garnish
- 1 cup whole pitted black olives, for garnish
- 1 cup salsa ( or more if desired)
- sour cream ( to garnish)
Southern Ham and Bean Soup

1. Melt butter in Dutch oven over medium-high heat
- 3 tablespoons unsalted butter
- 1 onion, chopped fine
- 2 celery ribs, chopped fine
- 3 garlic cloves, minced
- 1 pound ham steak, chopped fine
- 2 tablespoons dark brown sugar
- 3/4 teaspoon dried thyme
- 2 (16-ounce) cans white beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 2 cups frozen chopped green beans

1. Combine all dry ingredients

- Sweet and spicy pumpkin muffins with a crusty top and butterscotch chips sprinkled throughout

- 2 1/2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups brown sugar
- 2 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 1 3/4 cups pumpkin
- 4 eggs
- 1/2 cup oil
- 2 cups nuts, optional
- 2 cups butterscotch chips/morsels
Bacon - Cheddar Cheese Scones

Preheat oven to 400 In a large bowl, sift together dry ingredients
- 4 slices of bacon, crumbled
- 3 cups flour
- 1 tbs. baking powder
- 1 tbs. sugar
- 1 1/2 tsp. salt
- 1 stick butter, cut into pieces
- 6 oz. sharp cheddar cheese, grated (about 1 1/2 cups)
- 1/2 cup thinly sliced green onions
- 1/2 tsp. black pepper
- 1 cup heavy cream, plus 2 tbs.
Smoothie "Strawberry Oatmeal Breakfast Smoothie"

Directions: 1. In a blender, combine soy milk, oats, banana and strawberries

- 1 banana, broken into chunks 14 frozen strawberries

- 1/2 cup peanut oil
- 4 tablespoons soy sauce

- 2 cloves garlic, minced
- 1 1/2 teaspoons ground ginger
- 2 teaspoons crushed red pepper flakes
