Pesto Shrimp Pasta

1. Boil the pasta according to the package directions
- 4 oz Barilla Plus penne pasta
- 12 –14 medium-size precooked, peeled shrimp
- 3 cup chopped baby spinach
- 1 tomato, chopped
- 3 Tbsp ready-made pesto
- 3 Tbsp crumbled Gorgonzola cheese
- 2 Tbsp diced walnuts
Caramel Popcorn

1.Preheat oven to 250 degrees F (95 degrees C)
- 1 cup butter
- 2 cups brown sugar
- 1/2 cup corn syrup
- 1 teaspoon salt1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 5 quarts popped popcorn
Black Bean Burger

1. COMBINE mushrooms, onion, cilantro, bread crumbs, garlic, pepper, egg white, and soy sauce in food processor
- WORK TIME: 10 MINUTES / TOTAL TIME: 20 MINUTES / SERVINGS: 4
- 6 oz mushrooms, quartered
- 1/2 red onion, quartered
- 1/2 c packed cilantro leaves
- 6 Tbsp whole wheat bread crumbs
- 2 cloves garlic
- 1 jalapehile pepper, seeded
- 1 egg white
- 2 tsp reduced-sodium soy sauce
- 1 can (15 oz) no-salt-added black beans, rinsed and drained
- 1 Tbsp canola oil
- 4 slices reduced-fat pepper Jack
- 4 sm whole wheat sandwich rolls, toasted
- 4 lettuce leaves
- 1 sm tomato, sliced
Black Bean Humus

Drain and rinse black beans if using canned
- 3 1/2 cups black beans
- 1 small onion, diced
- 1/2 green pepper, diced
- 3 cloves garlic, minced
- 2 T ground cumin
- 1 1/2 t olive oil
- 2 T chopped fresh cilantro
- 1/4 c vegetable broth
Glazed Cinnamon Apples Recipe

Peel, core and cut each apple into eight wedges; transfer to a 3-qt
- 6 large tart apples
- 2 tablespoons lemon juice
- 1/2 cup packed brown sugar
- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 6 tablespoons butter, melted
- Vanilla ice cream
Salmon Salad

Combine Dijonnaise, cream cheese, and lemon juice in a bowl
- 2 tbsp. Hellmann's/Best Foods Dijonnaise
- 1 tbsp. fat-free cream cheese, room temperature
- 2 tsp. lemon juice
- 6 oz. canned or pouched boneless skinless pink salmon, drained and flaked
- 1/2 cup quartered cherry or grape tomatoes
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/2 tbsp. capers, drained
- Optional: salt and black pepper
