Peanut Butter Nanaimo Bar

There are a number of stories as to where this cookie came from
- Cookie:
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup sugar
- 1/3 cup cocoa
- 1 large egg, beaten
- 1 3/4 cups graham cracker crumbs
- 1 cup shredded sweetened coconut
- 1/2 cup finely chopped blanched almonds
- Peanut Butter Filling:
- 1/3 cup unsalted butter, softened
- 1/3 cup peanut butter
- 1/2 cup confectioners' sugar
- Chocolate Glaze:
- 4 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
Buckeye Bars

- 1/2 cup (1 stick) butter, softened
- 3/4 cup crunchy peanut butter
- 22 NILLA Wafers, crushed
- 2 cups powdered sugar
- 1/2 of 8-oz. tub COOL WHIP Whipped Topping (Do not thaw.)
- 3 squares BAKER'S Semi-Sweet Chocolate
Maple Bran Muffins

- Icing:
- 1 2/3 cups buttermilk
- 2 cups bran cereal (such as All Bran)
- 1 cup whole wheat flour
- 1 3/4 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 baking soda
- 1/2 cup refrigerated egg product or 2 eggs lightly beaten
- 1/3 cup packed brown sugar
- 1/4 cup maple syrup
- 3 Tbsp canola oil
- 3/4 cup raisins
- 1/3 cup sifted powdered sugar
- 1/4 tsp maple syrup
- fat free milk
Walnut-Crusted Chicken with Spinach Stuffing

- 2 tablespoons extra-virgin olive oil
- 1 large garlic clove, finely chopped
- 10 ounces baby spinach (about 12 cups)
- Salt and freshly ground pepper
- 4 ounces goat cheese, crumbled
- 8 ounces chopped walnuts (about 2 cups)
- 1/2 cup plus 2 tablespoons all-purpose flour
- 2 large eggs
- 4 skinless, boneless chicken breast halves, pounded 1/4 inch thick
Chocolate Truffle Topped Caramel Bars

- Chocolate Truffle Topping:
- 1/3 cup whipping cream
- 3 T. butter or margarine
- 1 T. light corn syrup
- 1 (12oz) bag dark chocolate chips
- Crust:
- 1 cup flour
- 1/2 cup packed brown sugar
- 1/2 cup cold butter or margarine
- 1 cup quick cooking or old fashioned oats
- 1 cup chopped pecans
- Caramel Layer:
- 1 cup butter or margarine
- 1 cup packed brown sugar
- 1/4 cup light corn syrup
- 1/4 t. salt
- 1 (14 oz) can sweetened condensed milk
Lemon Drops

1. In a large mixing bowl beat butter with an electric mixer on med-high speed for 30 seconds
- Lemon Glaze:
- 1/2 cup butter
- 3/4 cup sugar
- 4 tsp grated lemon peel
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1 egg
- 1/2 cup dairy sour cream
- 1/3 cup lemon juice
- 2 cups all purpose flour
- 1/4 cup confectioners sugar
- 2 Tbsp lemon juice
Lime-Marinated Flank Steak

Place the lime juice, orange juice, garlic, balsamic vinegar, olive oil and salt and pepper
- 1/4 cup fresh lime juice (about 3 limes)
- 1 orange, juiced
- 3 garlic cloves, smashed
- 3 tablespoons balsamic vinegar

- 1/3 cup finely chopped crystallized ginger

- 1/8 teaspoon ground cinnamon
- 3 to 3 1/2 teaspoons orange juice
Lemon Chicken with Artichoke Hearts

- 1/2 medium yellow onion, finely chopped
- 3 medium garlic cloves, thinly sliced
- 1 1/2 pounds boneless skinless chicken meat, large dice
- 1 1/2 cups quartered artichoke hearts (canned or jarred - not frozen)
- 2/3 cup dry white wine
- 1/3 cup water
- 1 teaspoon freshly squeezed lemon juice
- 1/2 cup lightly packed thinly sliced basil leaves
