  • 1 lb. frozen hash brown potatoes -thawed
  • 4 eggs, beaten
  • 1 Tbl. fat-free milk
  • 2 oz. cooked lean ham, finely chopped
  • 1/8 cup chopped green peppers
  • 1/8 cup chopped onions
  • 1/2 cup shredded low-fat cheese
  • salt & pepper to taste
  • *Note: this is 2 points on Weight Watchers
  • Preheat oven to 350.
  • 1 . Coat 8 muffin tins with cooking spray. Divide potatoes evenly between tins, place in oven and cook 10 minutes.
  • 2 . Meanwhile, mix together all other ingredients.
  • 3 . Remove potatoes from oven after 10 minutes and carefully press potatoes into tins to resemble mini pie crust.
  • Potatoes should cover the bottomand side of each tin.
  • 4 . Pour about 1/4 cup egg mixture into the center of each muffin tin.
  • 5 . Return muffin tin to oven and cook until egg mixuture is set, about 15 minutes. Remove from oven, let sit for 5 minutes before serving.
