Rub the fillets with kosher salt and set aside
- 4 skinless mahi-mahi fillets, approximately 2 pounds
- 2 teaspoons kosher salt
- 1/2 cup diced red onion
- 1/4 cup freshly squeezed lime juice
- 1/4 cup freshly squeezed orange juice
- 1 tablespoon minced jalapeno
- 1/4 cup dark brown sugar, packed
- 1/4 cup tequila
- 1 tablespoon olive oil
- 1/4 cup freshly chopped cilantro leaves
Pecorino Romano with Apples and Fig Jam

- 6 dried figs, halved
- 1/2 cup simple syrup, recipe follows
- 2 tablespoons brandy
- 1/4 cup chopped toasted hazelnuts
- 24 baguette slices

- Crust
- 1 cup all purpose flour
- 1/4 teaspoon salt
- 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes

- 2 tablespoons (1/4 stick) butter

- 2 tablespoons water

- 1 tablespoon confectioners' sugar, plus about 1/2 to 2 cups more for dusting

- Ingredients
- 1 whole chicken, about 5 to 6 pounds, cut into 8 pieces
- 1 cup flour
- Creole seasoning, recipe follows
- 1 cup olive oil
- 2 cups chopped yellow onions
- Salt
- Crushed red pepper
- 1 pound shiitake mushrooms, cleaned, stemmed and sliced
- 2 tablespoons chopped garlic
- 1 cup dry white wine
- 2 cups chopped fresh tomatoes, peeled and seeded
- 1 cup tomato sauce
- 2 cups chicken stock
- 1 bay leaf
- 4 sprigs fresh thyme
- 1/4 cup chiffonade basil
- 1/2 pound cooked fettuccine or spaghetti (tossed in olive oil, salt and pepper)
- 4 ounces grated Parmigiano-Reggiano
- 1 tablespoon finely chopped fresh parsley leaves
Veracruz-Style Tilapia ("Pescado A La Veracruzana")

- 3 tablespoons olive oil, divided
- 4 (6-ounce) tilapia fillets or other white fish fillets
- Salt and freshly ground black pepper
- 1 small onion, chopped
- 4 garlic cloves, minced
- 1 1/2 cups canned crushed tomatoes with juice
- 1 Anaheim chile, stemmed, seeded and cut into thin strips
- 1 bay leaf
- 1 teaspoon dried oregano
- 1/2 cup pitted and halved green olives
- 1/4 cup capers, drained
Tuna Ceviche with Avocado and Cilantro

Fill with the ceviche into phyllo cups rather than serving with tortilla chips
- 1 pound sushi-grade tuna, sliced 1/4 inch thick
- 1 small red onion, halved and thinly sliced
- 3/4 cup fresh lime juice (from about 5 limes)
- 1 teaspoon freshly ground black pepper
- 1 large Hass avocado, cut into 1/3-inch dice
- 1/4 cup coarsely chopped cilantro, plus leaves for garnish
- Salt
- Tortilla chips, for serving
Snow Slide Hot Coffee/Chocolate Drink

- 1 cup hot coffee
- 2 T. hot chocolate mix
- 1/2 oz. Baileys Irish Cream
- 1/2 oz. Kahlua
- 1/2 oz. vodka
- Whipped cream or marshmallows
- Chocolate sauce
