The Ultimate Cheesecake

- 2 cups finely ground graham crackers (about 30 squares)
- 1/2 teaspoon ground cinnamon
- 1 stick unsalted butter, melted
- 1 pound cream cheese, 2 (8-ounce) blocks, softened
- 3 eggs
- 1 cup sugar
- 1 pint sour cream
- 1 lemon, zested
- 1 dash vanilla extract
- Warm Lemon Blueberry Topping, recipe follows
- 1 pint blueberries
- 1 lemon, zested and juiced
- 2 tablespoons sugar
Texas Cranberry Chutney

This chutney can be used as a topping for grilled pork or as a topping over soft brie on a baguette
- Makes 3 cups
- 2 (8-ounce) cans crushed pineapple
- 1 (16-ounce) can whole berry cranberry sauce
- 1/4 cup firmly packed brown sugar
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 to 2 jalapeño peppers, seeded and minced
- 3 green onions, chopped
- Soft brie(triple cream brie works nicely)
- 1 French baguette
Coconut Macaroon Cookies

1.Adjust your oven racks so one is in the center of the oven
- ◾14 ounces sweetened coconut flakes
- ◾1 can (14 ounces) sweetened condensed milk
- ◾1 teaspoon pure vanilla extract
- ◾2 extra-large egg whites, at room temperature
- ◾1/4 teaspoon kosher salt
White Almond Sour Cream Cake

Instructions Mix all dry ingredients by hand using a whisk in a very large mixing bowl
- 1 (15.25 oz) white cake mix - I use Pillsbury with pudding in the mix
- 1 cup sugar
- 1 1/2 cups all-purpose flour
- 1 1/3 cup water
- 1 tsp. vanilla extract
- 1 tsp almond extract (or omit the almond and do 2 tsp. of vanilla)
- 4 egg whites (for true white) or 3 whole eggs
- 1 cup sour cream
- 2 Tbsp. vegetable oil

- 1/3 cup fresh lemon juice
- 4 cups sliced fennel (about 2 bulbs)
- 1/2 cup extra-virgin olive oil, divided

- 1/3 cup thinly sliced red onion
