Polenta Lasagne

DIRECTIONS Spinach/sausage mixture Heat the oil in a large skillet over high heat
- FOR THE SPINACH/SAUSAGE:
- 2 tablespoons extra-virgin olive oil
- 4 cloves chopped garlic
- 3 (10-ounce) bags spinach, washed, any large stems removed
- Gray salt and freshly ground black pepper
- 2 pound Italian sausage links, cooked and sliced 1/8-inch thick
- FOR THE RICOTTA MIXTURE:
- 2 cups fresh ricotta cheese
- 2 egg yolks
- 1/4 teaspoon freshly grated nutmeg
- FOR THE POLENTA:
- 15 cups water
- 2 tablespoon sea salt, preferable gray salt
- 3 cups fine grind polenta
- 2 cups grated Parmesan
- 4 teaspoons roasted garlic oil, or extra-virgin olive oil
- TO ASSEMBLE:
- 4 cups prepared marinara sauce
- 1 cup jarred roasted, peeled and seeded yellow pepper, cut into 1-inch squares
- 1 cup jarred roasted, peeled and seeded red pepper, cut into 1-inch squares
- 1/2 cup grated Parmesan
- 1 pound fresh mozzarella, thinly sliced
Seafood Risotto

- 1 tablespoon olive oil
- 1 cup chopped onions
- Salt
- Freshly ground white pepper
- Freshly ground black pepper
- 6 cups seafood stock
- 1 teaspoon chopped garlic
- 1 pound (2 cups) Arborio rice
- 2 pounds assorted Mediterranean shellfish and seafood
- 1 tablespoon butter
- 1/4 cup heavy cream
- 1/2 cup freshly grated Parmigiano-Reggiano
- 3 tablespoons chopped green onions, green part only

In the bowl of an electric mixer, cream room temperature butter with shortening until light, gradually adding sugar
- 1/2 cup each butter and shortening
- 1 1/2 cups white sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 3/4 cups pastry flour
- 1 1/2 teaspoons cream of tartar (or Bakewell Cream)
- 1 teaspoon baking soda
- 1/3 teaspoon salt
- 1 tablespoon cinnamon
- 3 tablespoons Turbinado sugar
Wild Berry Mojito

In a 12-oz. highball glass, muddle mint, simple syrup, wild berries and lime juice
- 1-1/2 oz. Bacardi Light Rum
- 3-4 each of fresh blackberries, blueberries and red raspberries
- 8-12 fresh mint leaves

- soda water
- mint sprig for garnish
