Salad - Grilled Salmon and Grapefruit Salad with Blood Orange Vinaigrette

1. Prepare grill. 2. Sprinkle fillets with salt and pepper
- 2 (6-ounce) salmon fillets (1 to 1 1/4 inches thick)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 large Vidalia or other sweet onion, cut into 1/2-inch-thick slices
- Cooking spray
- 8 cups mixed baby salad greens
- 1 jar (24-ounce) jar red grapefruit sections (such as Del Monte), drained
- Blood Orange Vinaigrette
- 1/3 cup blood orange juice
- 1 tablespoon minced shallots
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
White Chocolate and Fresh Raspberry Terrine

- 2 1/4 cups milk
- 1 cup sugar
- 1/2 teaspoon pure vanilla extract
- 3 egg yolks
- 1/4 cup cornstarch, dissolved in 1/4 cup water
- 4 ounces white chocolate, finely chopped
- 1 tablespoon butter
- 2 teaspoons gelatin
- 2 teaspoons water
- 2 tablespoons heavy cream
- 3 cups sweetened whipped cream
- 1 cup simple syrup, (equal amounts water and sugar, simmered until sugar dissolves
- 1/2 cup Chambord
- 1/2 sheet pan Chocolate Sponge cake, cut into 3 (9 by 5-inch) slices, recipe follows
- 2 pints fresh raspberries
- 3-ounce piece white chocolate, shaved into curls
- 2 cups raspberry sauce, recipe follows

- 1 pkg (12 oz) Food You Feel Good About Cleaned & Cut Trimmed Green Beans
- 4 tilapia fillets (about 6 oz each)
- Wegmans Pan Searing Flour
- 1 Tbsp Wegmans Pure Olive Oil
- 1 Tbsp Wegmans Basting Oil
- 1 tsp Wegmans Butter
- 1 pint grape tomatoes, halved
- 2 Tbsp Wegmans Lemon-Dill Finishing Butter (Dairy Dept) or Wegmans Citrus Soy Sauce (Prepared Foods)

Home made Caesar Dressing

Note: I like using the egg beater equivilant so you do not need to do the 1st step
- 1 clove garlic - ground up
- 1/4 t. pepper
- 1/2 t. salt
- 2 T. grey poupon mustard
- 1 egg or egg beater equvilant
- 2/3 cup olive oil
- 2 T. fresh squeezed lemon juice
- 1/4 cup freshly ground parmesaean cheese

- 1 box Betty Crocker® SuperMoist® yellow cake mix
- 1 1/4 cups water
- 1 tablespoon vegetable oil
- 2 teaspoons vanilla
- 4 eggs
- 1 can (14 oz) sweetened condensed milk (not evaporated)
- 1 cup whole milk or evaporated milk
- 1 cup whipping cream
- 1 container Betty Crocker® Whipped fluffy white frosting

- 3 tablespoons butter
- 1 tablespoon olive oil
- 4 sweet (Walla-Walla, Maui, or Vidalia) or yellow onions (2 lb. total), peeled and sliced very thinly
- 1 firm-ripe pear (8 oz.), rinsed and cut in half crosswise, then lengthwise
- Salt and pepper
- 2 sheets puff pastry, thawed but kept cool
- 7 ounces (1 1/2 cups) crumbled gorgonzola or other blue cheese

- Pillsbury™ refrigerated pie crust, softened as directed on box
- Filling
- 3 eggs
- 1 cup sugar
- 1 cup light corn syrup
- 2 tablespoons butter, melted
- 1 teaspoon vanilla
- 1 1/2 cups chopped pecans
- 1/2 cup semisweet chocolate chips or dark chocolate chips
Tomato Pasta Salad

This is a great alternative to traditional pasta salad
- 4 cups tomatoes- chopped up
- 2 cloves minced garlic
- 2 T. olive oil
- 1/2 t. salt
- 1 T. balsamic vinegar
- 3 T. chopped basil
- 1/2 t. pepper
- 1 box bow-tie pasta
- 1/2 - 3/4 cup goat cheese (depending on your preference)
