King's Arms Tavern Kidney Bean Relish

This recipe is originally from The Williamsburg Cookbook
- 2 (15.5oz) cans kidney beans, rinsed & drained
- 1 medium red onion, chopped
- 1/4 cup white vinegar
- 1/4 cup vegetable oil
- 1/2 teaspoon chives, snipped
- 1/2 teaspoon oregano
- salt and pepper to taste
Pesto

This is the best recipe I’ve found so far for Basil Pesto
- 1 cup packed Basil leaves
- 2 Tablespoons Flat Leaf Italian Parsley
- 2-3 large garlic cloves, sliced
- 1/3 cup olive oil
- 3 T - 1/4 cup Parmesan cheese, to taste depending on type of Parm. used
- salt
- Optional: 3 T pine nuts, add w/ basil leaves

- TBSP. EACH:
- 1 CUP Butter
- 1 1/2 CUPS SUGAR
- 3 EGGS
- 1 CUP MILK
- 1 TSP. VANILLA
- 5 CUPS FLOUR
- 5 TSP. BAKING POWDER
- CINNAMON
- GROUND CLOVES
- NUTMEG
- 3/4 CUP COCOA POWDER

Huevos Rancheros

Directions To make the Ranchero Sauce, in a medium pot, heat the oil over medium-high heat
- Ranchero Sauce:
- 1 tablespoon vegetable oil
- 1 cup chopped white onions
- 1/2 cup chopped red bell pepper

- 1 teaspoon ground cumin

- 1 cup chicken stock
- 3 tablespoons chopped cilantro

- 2 teaspoons vegetable oil
- 4 large corn tortillas
- 1/2 cup warm refried beans
- 1 1/4 cup Andouille Sausage, cooked and crumbled
- 2 tablespoons unsalted butter
- 8 large eggs
- 1 1/2 cups pepper Jack

Kentucky Biscuits

Preheat oven to 400 degrees F (200 degrees C)
- 2 cups all purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 dash of salt
- 1 Tbsp White sugar
- 1/2 cup cold butter (4 oz.)
- 3/4 cup buttermilk
Black Bean Soup

Heat olive oil on MED-HIGH in large stockpot, 1 min, until oil is hot
- 2 Tbsp Wegmans Pure Olive Oil
- 14 oz Chopped Onions
- 2 sweet red peppers, 1/4-inch dice
- 1 jalapeno peppers, 1/4-inch dice (wear gloves)
- 6 cloves, minced
- 1 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp dried oregano
- 1 tsp ground cayenne pepper
- 2 Tbsp Red Wine Vinegar
- 8 cans (15.5 oz each) Black Beans, drained and rinsed or 4lbs 12oz. dried beans,cooked
- 64 oz Chicken Stock
- Salt and pepper to taste
- Creme Fraiche
