Cinnamon Apple Cheesecake

1. In a small bowl, cream butter and brown sugar until light and fluffy
- FILLING:
- 1/2 1/2 1/2 cup butter, softened
- 1/4 1/4 1/4 cup packed brown sugar
- 1 1 1 cup all-purpose flour
- 1/4 1/4 1/4 cup quick-cooking oats
- 1/4 1/4 1/4 cup finely chopped walnuts
- 1/2 1/2 1/2 teaspoon ground cinnamon
- 2 2 2 packages (8 ounces each) cream cheese, softened
- 1 1 1 can (14 ounces) sweetened condensed milk
- 1/2 1/2 1/2 cup thawed apple juice concentrate
- 3 3 3 eggs, lightly beaten
- TOPPING:
- 2 2 2 medium tart apples, peeled and sliced
- 1 1 1 tablespoon butter
- 1 1 1 teaspoon cornstarch
- 1/4 1/4 1/4 teaspoon ground cinnamon
- 1/4 1/4 1/4 cup thawed apple juice concentrate
- 2 2. to In a large bowl, beat cream cheese until fluffy. Beat in milk and apple juice concentrate until smooth. Add eggs; beat on low speed just until combined (batter will be thin). Pour into crust. Return pan to baking sheet.
- 3 3. 325° 40-45 10 to 1 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.
- 4 4. 5 to a large skillet, cook and stir apples in butter over medium heat until crisp-tender, about 5 minutes. Cool to room temperature. Arrange over cheesecake.
Three Sisters Soup

The three sisters are corn, beans, and squash
- 1 cup dried red or black beans or 3 cups canned beans
- 4 cups water (for dried beans)
- 1 butternut squash, peeled, seeded and cubed
- 1-2 Tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 4 garlic cloves, minced (or 1 tsp. dried minced garlic)
- 2 celery ribs, sliced
- 6 cups vegetable or chicken stock
- 2 cups chopped fresh tomatoes
- 1 cup fresh or frozen corn
- 1 tsp. parsley
- 1 tsp. thyme
- 1/2 tsp. each salt and pepper
Hash Brown Potato Pie

Heat oven to 350º. Cook sausage and drain to paper towel
- 5 large eggs
- 1/2 cup milk
- 3 cups Ore-Ida® Country Style Hash Browns thawed
- 1/3 cup green onions thinly sliced
- 1/3 cup green pepper, diced
- 1/2 teaspoon salt
- 1-1/2 cups sharp cheddar cheese shredded
- 1/2 tube Sage Sausage
Corn Meal Mush

In large saucepan, bring 3 cups warm water and salt to a boil
- 1 cup Yellow Corn Meal
- 1 cup Cold water
- 3 cups Warm water
- 1 tsp. salt
Fudge Surprise Key Lime Pie

Wonderful key lime pie with a fudge and nut bottom
- 1 cup sugar
- 2 Tbsp. cornstarch
- 1 envelope unflavored gelatin
- 2 egg yolks, beaten
- 1 1/4 cup milk
- 2 Tbsp. butter, cut up
- 1/3 cup lime juice
- 1/2 cup fudge ice cream topping
- Baked 9 inch pie shell, cooled
- 1/2 cup finely chopped macadamia nuts
- 1 (8 oz) carton sour cream
- several drops of green food coloring
- 1/3 - 2/3 cup whipping cream
- 1 Tbsp. powdered sugar
- Coarsely chopped macadamia nuts (optional)
- Chocolate shavings (optional)
Coconut Marmalade Shrimp

This recipe originally came from a Land O'Lakes cookbook
- 1 pound shrimp, peeled and deveined
- 1/4 cup butter
- 1/2 t. ground ginger
- 1 t. garlic, minced
- 1/3 cup orange marmalade
- 1 1/2 t. horseradish
- 1/4 cup flake coconut, toasted
- salt and pepper to taste
Pina Colada Fruit Dip

- 3/4 cup milk
- 8 oz. can crushed pineapple in own juice, undrained
- 3 oz. pkg. instant coconut creme pudding
- 1/2 cup sour cream
Caramelized Onions with steak sauce

- 3 sweet onions (2 lb.), thinly sliced, separated into rings
- 3 Tbsp. A.1. Original Steak Sauce

- 2 1/4 cups all-purpose flour
- 1 cup white sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1/4 cup sour milk
- 2 eggs, lightly beaten
- 1 1/2 cups shredded zucchini
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts

Mexican Casserole

In a large skillet over medium high heat, saute chicken in oil until cooked through and no longer pink inside
- 2 tablespoons vegetable oil
- 1 pound cubed skinless, boneless chicken breast meat
- 1 package taco seasoning mix
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 cup salsa
- 1 1/2 cups shredded Mexican-style cheese
- 3/4 cup sour cream
- 4 7" tortillas, (cut square using baking dish as template)
