Chicken Fried Rice

Heat 1 tablespoon oil in a large non-stick skillet (the largest you have) over medium high heat
- 2 tablespoons Sesame Oil, divided
- 8 ounces boneless skinless chicken breast, cut into bite sized pieces
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1/2 cup onion, diced
- 1 cup frozen peas and carrots, thawed
- 2 cloves garlic, minced (1 teaspoon)
- 4 cups cooked white or brown rice, cooled and chilled, overnight is best
- 1/3 cup low-sodium soy sauce
Garlic Sesame Snow Peas

1.Heat a skillet over medium-high heat
- 1/2 tablespoon coconut oil (or other mild flavored oil)
- 2 teaspoons sesame oil
- 1 large garlic clove, minced
- 8 ounces snow peas
- 1 teaspoon sesame seeds
- 2 teaspoons soy sauce
- salt to taste
Ground Beef Wellingtons

1. In a saucepan, melt butter until softened
- 1 cup chopped fresh mushrooms
- 1 package dry onion mix (minus 1 tbls.)
- 1 cup mozzarela cheese
- 1 package brown gravy mix
- 2 tablespoons butter or margarine
- 1 tablespoon and 1 teaspoon all-purpose flour
- 1/2 teaspoon pepper, divided
- 1 cup half-and-half cream
- 2 egg yolk
- 1/4 cup finely chopped onion
- 1/2 teaspoon salt
- 1 pound ground beef
- 2 (4 ounce) packages refrigerated crescent rolls
- 2 teaspoons dried parsley flakes
Farfalle Pasta with Prosciutto, Spinach, and Pine Nuts

In a small fry pan, toast the pine nuts over medium heat until light brown
- 1/3 cup pine nuts
- 1/3 cup golden raisins
- 1/4 cup boiling water
- Sauteed spinach
- 2-3 ounces prosciutto, thinly sliced and cut into small pieces
- Zest of 1/2 lemon
- Juice from 1/2 to 1 lemon
- 1/2 pound (8 ounces) farfalle pasta (bow ties)
- 1/4 cup olive oil
- Salt and fresh ground pepper
- Grated Parmesan cheese
Roast Beef Grilled Cheese Sandwich

Barbecue Sauce: In a small saucepan mix all the ingredients together and simmer on low heat for 10 minutes
