Coconut Cake Recipe

1. Preheat the oven to 325°F
- For the Cake:
- 6 tablespoons cold salted butter, plus more for pans
- 2 1/4 cups sugar
- 1 1/2 tablespoons vanilla extract
- 8 tablespoons (1 stick) salted butter, melted
- 5 egg yolks
- 3 whole eggs
- 2 1/2 cups cake flour, plus more for pans
- 1 tablespoon salt
- 1 tablespoon baking powder
- 1/2 cup buttermilk
- 3/4 cup heavy cream
- For the Glaze:
- 1/2 cup coconut milk
- 2 tablespoons powdered sugar
Yamberry Muffins

Heat the oven to 350 degrees and grease a 12-cup muffin pan
- 1 cup leftover mashed sweet potatoes (or yams)
- 2 large eggs
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 teaspoon finely grated orange zest, or to taste
- 1 tablespoon vanilla extract
- 1/2 cup wheat flour
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 cup leftover cranberry sauce
Guiltless Tailgate Wings

Peheat a nonstick skillet to med-high
- 3 tbs hot sauce
- 3 tsp honey
- 2 tbsp Wocestershire sauce
- 1/2 tsp paprika
- 1 clove garlic, chushed
- 12 boneless, skinless chicken tenders, about 12 oz total
- 2 tbsb low-fat blue cheese dressing.
Strawberry Mint Popsicles

Blend spinach, mint and coconut milk until smooth
- 1 1/2 cups spinach, fresh
- 1/2 cup chopped mint, fresh
- 1/4 cup coconut milk
- 16 ounce frozen bag of strawberries, defrosted
- 1/4 cup date syrup or honey
Pina Colada Green Smoothie

Blend spinach, almond milk, and coconut water until smooth
- 2 cups spinach, fresh
- 1 1/2 cups almond milk, unsweetened
- 1/2 cup coconut water
- 3 cups pineapple, fresh
- 2 tablespoons coconut flakes, unsweetened

Directions 1.In medium mixing bowl combine flour, baking powder, and salt; set aside
- 3 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups unsalted butter, softened
- 1 cup sugar
- 1 egg
- 1 tablespoon milk
- 2 1/2 teaspoons vanilla
- 1/4 teaspoon finely shredded lemon peel
Homemade Maple Nut Ice Cream

- approx 1/2-1 cup apple cider vinegar

- salad:
- Chopped bell peppers (approx 2 or to taste)

- 1 can black beans
- 1 can pinto beans
- 1 can chickpeas/garbanzos
- 1 can black eyed pease
- celery, diced small (to taste, approx 1/4-1/2 cup)
