Flounder with Garlic and Apples

Ingredients
- 3 cloves garlic, minced
- 1 red delicious apple, peeled, cored, and chopped into 1/2" dice
- 2 tablespoons sugar
- 2 cups dry white wine
- 2 flounder fillets
- 1/4 teaspoon thyme
- 1/4 teaspoon tarragon
- 2 Tbp olive oil

Step 1
1. In a skillet over medium-high heat, sauté the garlic in the oil. When it has begun to slightly brown, add the apples and the sugar. Stir to blend and melt the sugar. Add the wine.
2. When wine has come to a simmer, place the fish in the pan. Poach until you see the white of the fish along the edges, then flip the fillet in the pan. Continue to cook until the fish begins to flake.
Serve with the sauce spooned over the fish.
