Parmesan Crusted Chicken

- 1/2 cup real mayonnaise
- 1/2 cup grated parmesan cheese
- Fresh Basil, Chives or Scallion, Garlic
- Salt and Pepper
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
Swedish Meatballs

In a small frying pan, melt the butter over moderate heat
- 1 Tbp butter
- 4 Tbp finely chopped onion
- 1 cup potato boiled and mashed
- 3 Tbp bread crumbs
- 1 pound lean ground beef
- 1/3 cup heavy cream
- 1 tsp salt
- 1 egg
- 1 Tbp chopped parsley
- 2 Tbp butter
- 2 Tbp vegetable oil
- 1 tsp pepper
- 1 tsp garlic powder or minced garlic
Fast Cheese Cake

Mix all crust ingredients together until crumbly
- Filling:
- 1 Graham cracker crust
- 1/3 cup brown sugar
- 1/2 tsp cinnamon
- 1/3 cup melted butter
- 1/2 cup sugar
- 2 eggs
- 1 1/2 cup cottage cheese
- 1/2 tsp vanilla
- 12 oz of cream cheese
Oatmeal cookies

Preheat oven to 400 degrees F Grease several baking sheets and set aside
- 1 1/2 cups raisins
- 1/3 cup water
- 2 cups flour
- 1/4 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 cups regular oats
- 1/2 tsp nutmeg
- 2/3 cup melted butter
- 1 cup sugar
- 1 egg
- 2 Tbp dark molasses
- 2 Tbp raisin water
Irish Soda Bread

- Sour Milk:
- 4 cups shifted flour
- 1 tsp baking soda
- 1 tsp salt
- 1 egg
- 1 egg yolk
- 1 Tbp water
- 1/4 cup sugar
- 3 tsp baking powder
- 1/4 cup butter
- 2 cups dark raisins
- 1 1/3 cup buttermilk or sour milk
- 2 Tbp caraway seeds
- 1 1/3 Tbp white vinegar
- 1/1 /3 cups whole milk
