Lemon Sauce

In a small glass dissolve the corn starch in the chicken stock
- 1/2 cup chicken stock
- 1/4 cup minced onions
- 1/3 cup lemon juice
- 1 Tbp lemon peel
- 3 Tbp corn starch
- 3 Tbp butter
- 1/3 cup honey
- Pinch of Salt

- 1 oz light rum
- 1/2 oz Crème De Banana
- 1/2 oz Blackberry Brandy
- 1/2 oz grenadine
- 1/2 oz orange juice
- 1/2 oz pineapple juice

- 8 tbs butter softened
- 3 tbs fresh lemon juice
- grated zest of one large lemon
- 4 1/4 cups confectioners sugar
Coffee Buttercream frosting

In a large metal mixing bowl cream the butter, milk and expresso
- 10 tbs butter softened
- 1 tbs 2% milk
- 2 tsp instant espresso powder dissolved in a small amount of hot water
- 3 cups confectioners sugar

Directions: In a mixing bowl, cream butter and sugar
- Ingredients:
- 1 cup butter or margarine, softened
- 2 cups sugar
- 3 eggs
- 2 teaspoons grated lemon peel
- 1 teaspoon vanilla extract
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups sour cream
- FROSTING:
- 3 tablespoons butter or margarine, softened
- 2 1/4 cups confectioners' sugar
- 2 tablespoons lemon juice
- 3/4 teaspoon lemon extract
- 1/4 teaspoon grated lemon peel
- 1 tablespoon milk

Tropical Salsa

Tropical fruit salsa for use on Fish or Pork
- 1 Ripe Mango
- 1 lime
- 5 rings of sliced pineapple grilled
- 3 Tbps Rice Vinegar
- 1/4 cup chopped red onion
- 3 Tbps chopped fresh cilantro
Banana Bread

Cream sugar and shortening together and add eggs
- 1 Cup sugar
- 1/2 Cup shortening
- 2 eggs, beaten
- 2 Cups flour
- 1 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3 tsp milk
- 3 ripe bananas, crushed
- 1/2 cup chopped nuts
Chicken in White Wine Sauce

Preheat oven to 350 degrees F
- 4 large boneless chicken breast
- 6 oz swiss cheese sliced
- 1 10oz can cream of chicken soup
- 1/4 cup white wine
- 1 cup herb flavored stuffing mix crushed
- 4 Tbp butter melted
- Salt and Pepper to taste

- 6 oz swiss cheese sliced
- 1 10oz can cream of chicken soup
- 1/4 cup white wine
- 1 cup herb flavored stuffing mix crushed
- 4 Tbp butter melted
- Salt and Pepper to taste
