Sprinkle marshmallows into a greased 13-in
- 2 cups miniature marshmallows
- 1 package (18-1/4 ounces) chocolate cake mix
- 1-1/4 cups water
- 3/4 cup peanut butter
- 1/3 cup vegetable oil
- 3 eggs
- 1 cup (6 ounces) semisweet chocolate chips
Jazzed Up Turkey Tetrazzini

Preheat oven to 350 degrees F
- For the filling:
- A dash of olive oil, as needed
- 1 medium sweet onion, diced
- 4 cloves of garlic, chopped
- 2 medium carrots, cut into julienne strips (thin sticks)
- 1/2 cup chopped celery
- 1/2 lb. sliced Baby Bella mushrooms
- 12 oz. gluten-free quinoa linguini or brown rice spaghetti cooked to al dente (still firm), rinsed, drained
- 3 cups hand-torn cooked free-range organic turkey pieces
- A squeeze of fresh lemon juice
- Sea salt and ground pepper, to taste
- For the sauce:
- 4 tablespoons light olive oil
- 4 tablespoons white rice flour
- 2 cups non-dairy rice milk (or milk)
- 1 1/2 cups gluten-free chicken broth
- Optional- 2 tablespoons nutritional yeast, for flavor
- 1/4 cup dry sherry or white wine
- 1 teaspoon tarragon or parsley
- Sea salt and ground pepper or paprika, to taste
- For the crumb topping:
- 2 cups Crunchy Gluten-Free Bread Crumbs (tossed in olive oil or melted vegan margarine)
- 1 teaspoon French herbs- or parsley

Preheat your oven to 375 degrees
- 2 1/2 cups all-purpose gluten-free flour (I use Better Batter)
- 1 3/4 teaspoons xanthan gum (omit if using Better Batter)
- 1/2 cup confectioner’s sugar
- 2 teaspoons baking powder
- 5 tablespoons whey powder
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon kosher salt
- Finely grated zest of 1 medium-sized lemon (optional)
- 3/4 teaspoon apple cider vinegar
- 5 extra-large eggs (or just pick the largest of your large eggs)
- 1/2 cup milk (at room temperature)
- 12 tablespoons unsalted butter, melted and cooled

Preheat your oven to 350 degrees Fahrenheit
- 3/4 cup plus 2 tablespoons all-purpose gluten-free flour (I use Better Batter)
- scant 1/2 teaspoon xanthan gum (omit if using Better Batter)
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1/2 cup packed light brown sugar
- 2 tablespoons unsalted butter, melted and cooled
- 2 tablespoons non-hydrogenated vegetable shortening (I like Spectrum)
- 1 extra-large egg
- 3/4 teaspoon pure vanilla extract
- 1/2 cup plus 2 tablespoons milk (low-fat is fine, nonfat is not; nondairy is fine)
- Frosting/filling of Choice
Peanut Butter Brownie Trifle

Prepare brownie batter according to package directions; stir in peanut butter chips
- 1 fudge brownie mix (13-inch x 9-inch pan size)
- 1 package (10 ounces) peanut butter chips
- 2 packages (13 ounces each) miniature peanut butter cups
- 4 cups cold 2% milk
- 2 packages (5.1 ounces each) instant vanilla pudding mix
- 1 cup creamy peanut butter
- 4 teaspoons vanilla extract
- 3 cartons (8 ounces each) frozen whipped topping, thawed
Basic Banana Bread

Preheat oven to 425. Line muffin tins with foil/paper muffin forms
- 1 1/2 cups oat flour
- 1 cup rolled oats
- 1 cup oat bran
- 2 tsp. baking soda
- 1 tsp. cinnamon

- 1/4 cup honey
- 3 Tblspn. vegetable oil
- 3/4 cup milk
