- 1 can (15 ounces) solid-pack pumpkin
- 2 cups sugar
- 1 cup canola oil
- 4 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 package (8 ounces) cream cheese, softened
- 1/3 cup sugar
- 1 egg
- Confectioners' sugar, optional

Put the dry ingredients into a large bowl
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 T granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup buttermilk or 3/4 cup plain yogurt plus 1/4 cup water
- 1 large egg
- 2 T mild olive or vegetable oil

- Dough
- 2 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 1/4 teaspoons instant yeast
- 7/8 to 1 cup warm water*
- Use the greater amount in the winter, the lesser amount in the summer, and somewhere in between in the spring and fall. Your goal is a soft dough.
- Topping
- 1 cup boiling water
- 2 tablespoons baking soda
- coarse, kosher or pretzel salt; or coarse or Swedish pearl sugar, optional

- 1/4 c coconut cream
- 1/4 c key lime juice (or frozen lime juice concentrate)
- 1 dash(es) water
- (you can use any kind rum and add coconut cream, or you can use coconut rum)
