Risotto with Butternut Squash and Sage

From The Pressured Cook by Lorna Sass My Notes: I made this 11/1/01
- 1 T. butter or olive oil
- 1 cup minced onions
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine or dry vermouth
- 4 cups chicken or vegetable broth
- 1 1/2 lbs. butternut squash, peeled, seeded, and cut into 1” chunks (about 3 cups)
- 1 tsp. salt, or to taste
- Generous teaspoon dried sage leaves
- 1/2 cup freshly grated Parmesan cheese
- 3 T. minced fresh parsley, for garnish

- 1 pkg. Double Stuf Oreos – Cool Mint Flavor – (1 lb. , 1 oz. pkg.)
- use 22 cookies with cream centers included
- use 10 cookies with cream centers discarded
- 1 pkg. (8 oz.) cream cheese, room temperature
- chocolate bark or candy coating*

- 1 1/2 cups diced dried fruit*
- 1/4 cup apple juice, orange juice, rum, or a mixture

- 1/8 to 1/4 teaspoon Fiori di Sicilia, to taste

- 4 cans (10.5 oz.) minced clams, drained, liquid reserved
Blackberry Chip Ice Cream

- 4 cups finely chopped vanilla wafers – a 12 ounce box is about 2 1/2 cups crushed – measure after crushing
- 1 cup chopped nuts – measure after chopping – can use pecans, macadamia nuts, walnuts and cashews
- 1/2 cup Karo syrup
- 1/2 cup excellent rum – or excellent whiskey or excellent whatever
- 2 T Nestle's sweet dry cocoa – Hannah is going to use Ghiradelli's sweet cocoa with ground chocolate the next time she makes them
- 1 T strong coffee – brewed – liquid
- Coating: Dry cocoa, powdered sugar, chocolate sprinkles
