Prepare grill. Coat zucchini and bell pepper halves with cooking spray; place on grill rack
- 3 medium zucchini, halved lengthwise
- 2 red bell pepper, halved lengthwise and seeded
- Cooking spray
- 1 cup frozen whole-kernel corn, microwaved for 2 minutes
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper
- garlic salt to taste
Stir-Fried Shrimp with Snow Peas and Mushrooms

In a small bowl, stir together the cornstarch, sherry and water
- 2 tsp. cornstarch
- 1 tsp. dry sherry
- 2 tsp. water
- 4 tsp. peanut oil
- 1 lb. shrimp, peeled and deveined
- 1 Tbs. peeled and minced fresh ginger
- 1 small garlic clove, minced
- 16 snow peas, trimmed and strings removed
- 1/2 lb. fresh shiitake mushrooms, brushed clean, stems removed and caps cut into 1-inch pieces
- 1/4 cup chicken stock
- 1/4 tsp. Asian sesame oil
- 1/4 tsp. kosher salt, plus more, to taste
- Freshly ground pepper, to taste

- 1 1/2 cups basmati rice
- 1 pound Brussels sprouts. trimmed and halved
- 1 tablespoon olive oil
- 6 cloves garlic. halved
- 4 shitake mushrooms. stemmed and sliced
- 1/2 butternut squash. seeded and cubed
- 1 carrot cut into matchsticks
- 1 cup canned garbanzo beans, rinsed and drained
