Angel Hair Pasta with Scallops and Arugula

Fine Italian capers come from Pantelleria and Salina, two small Sicilian islands
- 1 1/2 lb. large sea scallops, side muscle
- removed
- Salt and freshly ground pepper, to taste
- 1/4 cup extra-virgin olive oil
- Grated zest of 1 lemon
- Leaves from 2 or 3 large fresh thyme sprigs,
- minced
- 4 Tbs. (1/2 stick) unsalted butter
- 5 shallots, minced
- 1 lb. angel hair pasta
- Juice of 1 lemon
- 1 cup chicken stock
- 1/4 cup capers, preferably salt-packed, rinsed
- and drained
- 1/2 cup pine nuts, lightly toasted
- 1 large bunch arugula, preferably small
- leaved, stems removed
Mike’s Fettuccini with White Clam Sauce

If using fresh chopped clams, dump them into a coffee filter over a bowl
- • Four medium to large shallots. Peeled and trimmed
- • 1 to 2 Tbsp. extra virgin olive oil
- • Four peeled cloves Garlic
- • Two 8 Oz bottles clam juice
- • ½ cup dry white wine
- • 16 Oz Fat Free Sour Cream
- • Anchovy paste or fillets, (Four to six anchovy fillets or six inch squirt of Anchovy paste)
- • 1½ tsp. dried Italian herbs
- • One lb. chopped clams (use more if you like)
- • Chopped parsley (optional)
- • Salt and freshly ground white pepper to taste
- • Parmesanio -Regiano
Grilled Halibut with Lemon-Basil Pesto

Prepare grill. Place fillets on grill rack coated with cooking spray
- 4 (6 ounce) halibut or other firm white fish fillets
- Cooking spray
- Salt and freshly ground pepper, to taste
- 1 tablespoon grated lemon rind
- 1 tablespoon fresh lemon juice
- 1 cup prepared basil pesto
Grilled Salmon Fillets with Mango-Cucumber Salsa

Fresh fruit salsa is a refreshing accompaniment to grilled fish, especially salmon
- 1 large, ripe mango, peeled, seeded and diced
- 1 large cucumber, finely diced
- 1 minced garlic clove
- Juice of 1 lime
- 1/8 teaspoon ground cumin
- 1 cup chopped green onions, green portion only
- 1/2 cup diced red bell pepper
- 1/4 teaspoon cayenne pepper
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons extra-virgin olive oil, plus more for grilling
- Salt and freshly ground black pepper, to taste
- 4 salmon fillets, each 6 ounces
Baby Bok Choy, Sugar Snap Peas & Garlic

Preheat oven to 400°F. Cut four 12-inch long pieces of nonstick foil
- 32 sugar snap peas
- 12 baby white onions, peeled and halved
- 2 baby bok choy, quartered
- 1 clove garlic, very thibnly sliced
- 1 tablespoon olive oil
- 4 sprigs mint
- 2 teaspoons grated orange zest
- Salt and pepper to taste
Curried Scallop Kabobs with Zucchini

Directions: Mix first three ingredients
- Ingredients:
- 4 teaspoons curry powder
- 1/2 teaspoon ground ginger
- 1 teaspoon cumin
- Salt and pepper, to taste

- 1/4 cup finely chopped celery
