- Avocado Mayo:
- 1/2 ripe hass avocado - rough chop
- 1/3 cup good quality mayo
- 1/4 teaspoon lemon zest
- 1/2 teaspoon champagne vinegar
- Avocado crab rolls:
- 1 cup crab meat - I used blue crab but use your best quality local or available crab (or even lobster if you had too :))
- 1/2 ripe hass avocado - chopped
- 2 tablespoons red pepper, minced
- 2 tablespoons celery, ribs removed, minced
- 1 tablespoon chopped chives
- 2 hot dog buns (top split preferred - if not, trim the side crust off to leave a flat space for toasting)
- 1 tablespoon butter
- 3-4 leaves buttercrunch (butter) lettuce - optional
- Old Bay seasoning
Heirloom Tomato and Basil Pizza

Preheat pizza stone in 450°F oven for 20 minutes
- Thin crust pizza dough for two pizzas
- All-purpose flour for dusting
- 1/4 cup olive oil for brushing
- 6 –7 garlic cloves, minced
- 16 ounces grated mozzarella cheese
- 2 pounds heirloom tomatoes, thinly sliced or 2 pints cherry tomatoes (Cherubs), halved
- Salt and freshly ground pepper, to taste
- 16 basil leaves, thinly sliced
Two-Bean Enchiladas

Preheat oven to 450°F. Lightly coat 9 x 13-inch baking dish with vegetable oil cooking spray
- 1 small onion, finely chopped
- 1 large bell pepper, finely chopped
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/4 cup vegetable broth
- 15 ounce can black beans
- 15 ounce can kidney beans
- 1 cup canned tomato sauce
- 1 cup frozen corn, thawed
- 8 corn tortillas
- Shredded cheddar cheese
Vegetable Kichdi

Heat the oil in a Dutch oven and sauté the spices over medium heat
- 1 1/4 cups (8 ounces) basmati rice
- 1/2 cup (2 ounces) red lentils
- 1 tablespoon olive oil
- 2 red bell peppers, de-seeded end chopped
- 1 tablespoon whole cumin seeds
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
- 1/16 teaspoon ground cinnamon
- 1 teaspoon turmeric powder, or 2 strands saffron
- 2 large onions, finely chopped
- 2 -inch piece fresh ginger, grated
- 1 large potato, peeled and diced
- 1 14 1/2 ounce can chopped tomatoes
- 4 ounces frozen peas
- 8 ounces broccoli florets
- 1 pint water
- 1 tablespoon salt

Prepare grill. Combine turkey gravy mix with next 4 ingredients
- 2 packages turkey gravy mix
- 2 pounds ground turkey
- 2 teaspoons minced onion
- 1/4 cup chopped parsley
- 1 1/2 cups shredded cheddar cheese
- 8 hamburger rolls
- 8 lettuce leaves
- 8 slices tomato
Paella a la Valencia

Cook onion, green beans and garlic for 5-7 minutes in a large non-stick skillet over medium heat
- 1 large yellow onion, chopped
- 16 ounce package haricots verts
- 2 cloves garlic, minced
- 5 large tomatoes, chopped
- 6 cups chicken broth, heated and divided
- 1 teaspoon saffron threads, crushed
- 1 tablespoon chopped rosemary
- 2 1/2 cups arborio rice
- 1 tablespoon olive oil
- 1/2 pound bay scallops
- 1 pound chunk crab meat or peeled shrimp
- 2 teaspoons salt
- 1 teaspoon white pepper
Cherry Tomato Pomodoro Spaghetti

Bring a large pot of salted water to a boil over high heat
- Kosher salt, to taste
- 16 ounces spaghetti
- 1 jar tomato and basil pasta sauce
- Parmigiano-Reggiano cheese for sprinkling
- 8 ounces cherry tomatoes
- Extra-virgin olive oil for drizzling
- Balsamic vinegar for drizzling (optional)
- Freshly grounds black pepper, to taste
- 8 ounces mozzarella cheese
- Fresh basil leaved for garnish
Wild Rice, Bean and Artichoke Salad

Cook rice according to package directions
- 8 ounce can garbanzo beans, drained and rinsed
- 8 ounce can black beans, drained and rinsed
- 6 ounce package long-grain and wild rice
- 7 ounce jar marinated artichoke quarters
- 6 green onions, sliced
- 1/2 cup chopped green bell pepper
- 12 ripe olives, sliced
- 1 celery rib, sliced
- 1/3 cup mayonnaise
- 3/4 teaspoon curry powder
- Leaf lettuce
