Ingredients

    tablespoon extra-virgin olive oil

    red bell pepper, diced

    ounce package frozen white corn, thawed

    (15-ounce) cans black beans, rinsed

  • 6

    cloves garlic, minced

  • 2

    tablespoons lime juice

  • Chopped cilantro

Directions

In a large sauté pan add olive oil and cook corn, red pepper and garlic over medium-high heat. When corn and pepper are cooked al dente, and the beans, lime juice and cilantro; stir until hot. This cooks quickly and should be done just before you are ready to serve.
