    individual ready-made pizza crusts

    large red bell pepper, cut in thin strips

  • 8

    ounces sliced mushrooms

  • 1

    tablespoon chopped fresh garlic

    ounces fresh spinach, torn

  • 16

    ounces mozzarella cheese slices

    teaspoon dried Italian seasoning

    plum tomatoes, sliced thin

    ounces sliced black olives, drained

    ounces crumbled feta cheese

Directions

Crisp pizza crusts in 425º oven for 5 minutes. Sauté bell pepper, garlic and mushrooms in a large non-stick skillet over medium-high heat 5 to 7 minutes, or until tender. Add spinach and sauté just until wilted. Lay mozzarella cheese slices on top of warm crusts. Add sautéed vegetable mixture. Sprinkle with Italian seasoning and salt; top with tomatoes, olives and crumbled feta. Bake in 425º oven for 6 to 10 minutes or until cheeses melt. Let cool before serving.
