Roasted Peppers and Olives

This is so simple and delicious, but sometimes it's the simple dishes that linger in our memories
- 2 medium pepper(s), red, bell
- 2 medium pepper(s), orange, bell
- 2 medium pepper(s), yellow, bell
- 10 whole olive(s), black
- 10 whole olives, green, pitted
- 1 tablespoon capers, drained
- 1 tablespoon vinegar, balsamic
- salt, sea
Chili

Put soup in blender for 3 seconds while meat is browning
- 2 Tablespoons Oil
- 1 1/2 - 2 Pounds Ground Round
- 10 oz can French Onion Soup (not creamy)
- 1 Tablespoon chili Powder
- 2 teaspoons Ground Cumin
- 1/2 teaspoon Black Pepper
- Tabasco Sauce - just a few drops
- 6 oz can Tomato Paste
- 8 oz can Tomato Sauce
- 1 can Red Kidney Beans
- 1 can Chili Hot Beans
- 1 can of Pork & Beans
- 1 small can of mushrooms (drained)
- Fresh Green and Red Peppers
Fried Peach Pies

Place dried fruit in a pot and add water
- 6-7 * 6-7 ounces dried fruit (I used peaches, can use apples, apricots, or other dried fruit)
- 1 * 1 cup sugar
- 2 * 2 cups water
- 1/4 * 1/4 cup butter or margarine
- 1 * 1 T lemon juice (optional, but I use it)
- 1/2 * 1/2 tsp cinnamon (optional, but I use it)
- Dough
- 2 * 2 Cups Flour
- 1 * 1 Tsp salt
- 1/2 * 1/2 C shortening
- 1/2 * 1/2 C of milk (can add a little more if needed)
Southern Fried Salmon Patties

Salmon patties are quick and easy
- 1 (14-3/4-ounce) canned salmon
- 1/4 cup onion, finely chopped
- 1/4 cup cornmeal
- 1/4 cup flour
- 1 egg
- 3 tablespoons mayonnaise
Apples, Fried

In a large skillet, combine the apple juice and sliced apples
- 2 1/2 cups apple juice
- 4 large golden delicious apples, unpeeled and cut into wedges
- 3 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1/4 tsp allspice
- 4 tablespoons sugar
Bagels

This method uses a two-stage process: 1
- For the sponge:
- 2 tsp active dry yeast, 1 tsp sugar
- 1-1/2 C. warm water
- 4 C. bread flour (high gluten flour).
- Mix the water, sugar and yeast together, stir well. Let set until you see yeast bubbles. Add the flour to make a soft spongy dough. Cover the dough and Place it in a warm place until it doubles in size.
- For the dough:
- 1 tsb active dry yeast
- 1 tsb sugar, 1/2 C. warm water
- 1 TBSB kosher salt
- 5 eggs
- 1 TBSB honey
- 3 C. + 1C. bread flour.
Apple Butter, Crock Pot

Serve over hot biscuits, toast, scones, or just eat it out of the jar if no one is looking!
- 2- 3 * 2- 3 lb (50 oz) jars unsweetened apple sauce
- 3 * 3 lbs granny smith apples
- 4 * 4 cups sugar
- 1 1/2 * 1 1/2 cups apple juice
- 2 * 2 tsp cinnamon
- 1 * 1 tsp cloves
- 1 * 1 tsp allspice

- 1 lb. ground beef
- 29 oz can tomato sauce
- 8 oz pkg. lasagna noodles, uncooked
- 4 cups shredded mozzarella cheese
- 1 1/2 cups cottage cheese
Taco Soup

Combine all ingredients, bring to a boil and then simmer for fifteen minutes
- 1 lb ground beef
- 1 Lg chopped onion, cooked with beef
- 2 cans kidney beans
- 1 can corn
- 1- 15 oz can Ro-Tel
- 1- 15 oz can Tomato Sauce
- 1 packet taco seasoning mix
- 1 packet ranch dressing mix
- 1 1/2 cups water
Slow-Cooker Barbecue Beef Sandwiches

Make your favorite creamy coleslaw to serve with or on this barbecue sandwich
- * 1 (3 1/2-pound) eye-of-round roast, cut in half vertically
- teaspoons * 2 teaspoons salt, divided
- * 2 garlic cloves, pressed
- can * 1 (10-ounce) can condensed beef broth
- cup * 1 cup ketchup
- cup * 1/2 cup firmly packed brown sugar
- cup * 1/2 cup lemon juice
- tablespoons * 3 tablespoons steak sauce
- teaspoon * 1 teaspoon coarse ground pepper
- teaspoon * 1 teaspoon Worcestershire sauce
- * 12 Kaiser rolls or sandwich buns
- * Dill pickle slices
