- 6 eggs
- 6 roma tomatoes
- 1/3 of a seedless cucumber, chopped (about 3/4 cup)
- 1/4 of a red onion, chopped (about 1/4 cup)
- 1/3 cup mayonnaise
- 1 Tbsp. Dijon-style mustard
- 1 bunch watercress, trimmed
- 1/2 teaspoon each salt and ground black pepper
Grilled Potato Salad

- 2 pounds Yukon gold potatoes (6 medium)
- 1 tablespoon olive oil
- 1/3 cup white balsamic vinegar
- 1/3 cup olive oil
- 1 tablespoon snipped fresh sage
- 1 tablespoon Dijon-style mustard
- 1 teaspoon maple syrup
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 cups fresh baby spinach
- 4 slices bacon, crisp-cooked, drained, and crumbled
- 2 hard-cooked eggs, coarsely chopped
- 1/4 cup finely chopped red onion
Grilled Peach Salad with Rosemary Dressing

- 3 T chopped fresh rosemary leaves
- 1/4 cup flat-leaf parsley leaves
- 1/2 t kosher salt
- 1/4 t pepper
- 3 ripe peaches, halved
- 12 diagonal baguette slices, 1/2 inch thick
- 4 oz. thinly sliced prosciutto
- 8 oz. arugula
- 4 oz. Spanish blue cheese such as Valdeon or a Western blue cheese such as Avalanche Cheese Company's goat, crumbled

- 6 cloves garlic, minced
- 1 1/2 teaspoons dried thyme, crushed
- 1/2 teaspoon salt
- 1/4 cup orange juice
- 1 tablespoon balsamic vinegar
- 1 8 - 10 ounce package mixed greens
- 1/2 cup cherry tomatoes, halved or quartered
- 1/4 cup pitted kalamata olives, halved
- 1/4 cup crumbled feta cheese (1 ounce)
- 1/2 cup bottled vinaigrette dressing
Creamy Chicken and Asparagus Soup

- 2 oz. chicken breast, diced
- 1/2 cup low-fat natural yogurt
- 1 teaspoon olive oil
- 1 cup canned asparagus, drained
- 1 1/2 cup onion, diced
- 1/2 - 1 cup chicken stock (adjust to desired consistency)
- salt, pepper & other seasonings to taste (I use Mrs. Dash)
Jerk Pork Wraps with Lime Mayo

- 1 tablespoon Jamaican jerk seasoning
- 1/4 teaspoon dried thyme, crushed
- 1 cup water
- 1 tablespoon lime juice
- 6 8 inches flour tortillas
- 6 lettuce leaves (optional)
- 1 medium red or green sweet pepper, chopped (1/2 cup)
- 1 medium mango, peeled, seeded, and chopped, or 1 cup chopped pineapple

Cacciatore-Style Chicken

- 1 cup sliced celery
- 1 cup chopped carrot
- 2 medium onions, cut into wedges
- 1 yellow, green, or red sweet pepper, cut into strips
- 4 cloves garlic, minced
- 12 chicken drumsticks, skinned (about 3-1/2 pounds total)
- 1/2 cup chicken broth
- 1/4 cup dry white wine
- 2 tablespoons quick-cooking tapioca
- 2 bay leaves
- 1 teaspoon dried oregano, crushed
- 1 teaspoon sugar

Easy Slow-Roasted Beef Tenderloin

- 1 teaspoon cracked black pepper

Whole Wheat Chocolate-Blueberry Cake

- 6 Tbsp. unsweetened cocoa powder
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cup water
- 1/2 cup fresh blueberries
- 1 egg
- 1 cup frozen light whipped dessert topping, thawed
- 1/2 cup semisweet chocolate pieces
- Fresh blueberries and/or Blueberry Sauce (see recipe below)
Chicken Tikka Masala

This was really good. Rick doesn't like ginger but he said it was fine with the fresh ginger
- Chicken Ingredients:
- 6-8 boneless/skinless chicken breasts cut into bite size pieces
- 2 tablespoons olive oil
- 1 bunch fresh cilantro, finely chopped (bottom stems cut off)
- 1 tablespoon lemon juice
- 1 can coconut milk
- 4 tablespoons finely chopped garlic
- 4 tablespoons finely chopped or grated fresh ginger
- Small pinch cayenne pepper (or more, for a spicier dish)
- Generous pinch of salt (you can add more to the sauce later, if needed)
- 1 tablespoon cinnamon
- 1 tablespoon chili powder
- 1 tablespoon turmeric
- 1 tablespoon ground black pepper
- Sauce Ingredients:
- ■1/4 cup olive oil
- ■1 tablespoon coconut oil
- ■2 yellow onions, sliced thinly
- ■6-ounces tomato paste (or less, for a less tomato-y sauce)
- ■1 can coconut milk
- ■28-ounces canned/boxed crushed tomatoes
- ■1 tablespoon fresh lemon juice
- ■3 tablespoons finely chopped garlic
- ■1/2 cup water
- ■2 teaspoons paprika
- ■1/2 teaspoon salt
- ■1/2 teaspoon cumin
- ■1/2 teaspoon chili powder
- ■1/2 teaspoon cinnamon
