Black-and-White Irish Cream Cupcakes

- Irish Cream Icing:
- 1/2 cup butter
- 4 egg whites
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups sugar
- 3 tablespoons Irish cream liqueur
- 1 teaspoon vanilla
- 1 1/4 cups buttermilk or sour milk*
- 3 ounces bittersweet chocolate, melted and cooled
- 1 recipe Irish Cream Ganache
- 1 recipe Irish Cream Icing
- Yield: about 1/2 cup
- Ingredients
- 1 cup powdered sugar
- 1 tablespoon Irish cream liqueur
- 1/4 teaspoon vanilla
- Directions
- 1 . In a small bowl stir together powdered sugar, liqueur, and vanilla.
- Irish Cream Ganache:
- Yield: about 1 cup
- Ingredients
- 1/2 cup whipping cream
- 6 ounces bittersweet chocolate, chopped
- 1 tablespoon Irish cream liqueur
- Directions
- 1 . In a small saucepan bring whipping cream just to boiling over medium-high heat. Remove from heat. Add chocolate (do not stir). Let stand for 5 minutes. Stir in liqueur until smooth. Cool about 15 minutes or until slightly thickened.

- 1 pound Monterey Jack or provolone cheese, cut into 3/4-inch cubes
- 1/2 cup extra-virgin olive oil
- 1 1/2 teaspoons finely shredded lemon peel
- 1/4 cup lemon juice
- 3 cloves garlic, sliced
- 1 1/2 teaspoons dried whole mixed peppercorns, cracked, or 1/2 tsp. ground black pepper
- 1 teaspoon fennel, cumin, or mustard seeds, crushed
Grilled Tomato Melts

- 3 large tomatoes (about 8 oz. each) or a variety of smaller tomatoes (about 1-1/2 lb. total)
- 4 ounces Monterey Jack cheese with jalapeno peppers or Monterey Jack cheese, shredded (1-1/2 cups)
- 1 small green, yellow, purple, or red sweet pepper, finely chopped (about 1/2 cup)
- 1/4 cup toasted sliced almonds

Crust: 1. Melt the butter or coconut oil in a large bowl
- Crust:
- 1 + cup of almond flour
- 3 tblspn organic butter OR Coconut oil
- 1 teaspoon cinnamon
- Filling:
- Approx 2 cups or 10 Large Strawberries. I used the frozen kind
- 2 8oz. packages organic cream cheese
- 2 dollops organic sour cream
- 1 teaspoon vanilla
- 3 eggs

- 1 tablespoon chopped, jarred garlic

- 1 - 16 oz. bag frozen oriental vegetables, thawed (2 carbs)
- 2 cups canned or fresh bean sprouts
- 1 tablespoon soy sauce
- salt & pepper to taste
- 1 can water chestnuts

- Toasted sesame seeds to garnish

- 1 1/2 cups chicken broth
- 2 tablespoons soy sauce

- 6 Tbsp. apricot preserves

- 1/2 tsp. curry powder

- 1 T coffee liqueur or 1 t instant espresso coffee powder
- 1/4 t baking soda
- 1/4 t cream of tartar
- 1/4 t salt
- 1 egg, lightly beaten
- 1 t vanilla
- 1-3/4 c all-purpose flour
- 1/4 c sugar
- 2 t ground cinnamon

- Ground cinnamon (optional)

- 3 T butter, softened
- 1 T coffee liqueur
- 3 C powdered sugar
- 1 to 3 T half-and-half or whipping cream
